✖️RECIPE for Simple Pumpkin Pie Overnight Oats✖️ per serving
1/2 cup rolled oats
1/2 cup pumpkin purée, canned works great
3/4 cup unsweetened nondairy milk
1 Tbsp chia seeds
1/4 tsp pumpkin pie spice
1 Tbsp maple syrup
1/4 tsp vanilla powder or extract
Add all ingredients to a jar or bowl and stir well. Let sit overnight and enjoy warm in the morning for all the cozy fall feels 🍁

Easy Vegan Blender Pancakes 🥞 Yesterday I taught my 11 year old son how to make pancakes 🥞 They did NOT look like these ☝️but they tasted even better because he made them 💙 We used a quick mix and some pumpkin + chocolate chips (is it’s OCTOBER after all 🎃) but next week he’ll graduate to this recipe because just as easy! Made with 6 ingredients blended together and poured directly onto the griddle...It’s perfect for beginners and peeps who hate kitchen clean up 🧼 🙋🏻‍♀️

Saturday Morning Blender Pancakes
Serves 6 hungry ppl
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
3 cups rolled oats
1 1/2 whole wheat pastry flour
4 teaspoons baking powder
3 large or 4 small ripe bananas 
1 1/5 cups almond milk
1 1/2 teaspoons apple cider vinegar
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions;
Add rolled oats to a high speed blender. Pulse until flour forms. Add whole wheat pastry flour and baking powder and pulse again.
Add bananas, almond milk and apple cider vinegar and blend until smooth batter forms. Let sit for a few minutes to thicken. Scoop batter with a cookie scoop onto oiled skillet or non stick pan. Add berries or other fruit before flipping + shot glasses of maple syrup 🍁

Baby Butternut Squash Stuffed with Red Curry Peanut Butter Chickpeas + Roasted Sweet Onion 🥜 I’ll never get tired of stuffing all the baby veggies! With the mild spice of red curry and rich creaminess from peanut butter made my taste buds happy 😊 Bonus that it takes minimal prep time and looks soooo pretty on your table. 🍂
⠀⠀⠀⠀⠀⠀⠀⠀⠀
✖️RECIPE ✖️
Ingredients:
3 baby butternut squash
1 sweet onion 
3 Tablespoons natural runny peanut butter
3 Tablespoons hot water
1/4 - 1/2 teaspoon red curry paste
1 teaspoon maple syrup
1 teaspoon tamari 
1 can cooked chickpeas
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the squash:
Preheat oven to 425 degrees. Like a baking sheet with parchment paper. Wash and slice baby butternut squash lengthwise. Scoop out seeds and place cut side down on the baking sheet. Peel and chop onion into large pieces and add to baking sheet. Bake 25-35 minutes until a fork pierces the squash easily. Remove baking sheet from the oven and set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the chickpeas:
Combine peanut butter, water, red curry paste, maple syrup and tamari in a small bowl and stir well until combined. Rinse and drain chickpeas and add to the sauce. Pour chickpeas and sauce into a medium saucepan, heat on low until sauce thickens and stuff inside baby butternut squash. I served these with sautéed kale + the pan roasted onions. 😋

Pickled veggies are lining the shelves of my fridge right now! I’ve put up rainbow carrots + yellow zuchinni + of course some Kirby cucumbers 🥒 I hate throwing out food, so when I found myself with some unused produce I decided to pickle it instead. Now I’m not quite sure how to use all these pickles. I’m thinking of adding the pickled zucchini to tacos 🌮 & the pickled carrots to kale salad 🥗 or eat them all stacked in a sandwich 🥪 . 
How would you use these pretty pickles? ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Easy RECIPE for Refrigerator Pickled Veggies:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup white vinegar
1 cup filtered water
1 Tablespoons kosher salt
1 teaspoon cane sugar 
Fresh dill
Mustard seeds
Peppercorns 
Prepare veggies and add to clean glass jars with tight fitting lids. Warm vinegar, water, salt and sugar until salt and sugar have completely dissolved, stirring well. Pour over veggies and add herbs as desired. Cool to room temperature and store in the refrigerator. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Double Lentil Soup 🥣 Cozy bowls + sourdough bread are pretty much all I want right now. Made with both brown + red lentils that I found in the bulk bins at the market, this soup is not only easy and inexpensive to make, it’s also packed with plant protein and veggies. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients:
1 onion, chopped
4 carrots, chopped
6 cups vegetable broth
1/2 teaspoon sea salt
1/2 teaspoon dried thyme
1 teaspoon dried rosemary 
1 cup green lentils, rinsed and picked over
1 cup red lentils, rinsed and picked over
1 medium potato, chopped
2 Tablespoons apple cider vinegar ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
Add all ingredients expect apple cider vinegar to a pressure cooker (I used my @instantpotofficial). Lock lid in place according to manufacturer’s instructions and set to cook on manual for 6 minutes. Allow pressure to release naturally and always be careful when removing the lid! 
When ready to serve, add salt and pepper to taste and stir in vinegar. Serve with lots of fresh herbs + crusty bread 😋

Ingredients:
1/2 cup vegan butter or refined coconut oil at room temp
1/2 cup cane sugar
1/4 cup maple syrup
1/4 cup non dairy milk
1 cup flour*
1/4 cup + 1 Tablespoon cocoa powder
1/2 teaspoon baking soda
Pinch sea salt
1 cup vegan chocolate chips

Instructions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat your oven to 350 degree Fahrenheit. Line 2 baking sheets with parchment paper.

Make sure your butter or coconut oil is room temperature. Beat butter or oil, cane sugar, maple syrup and non dairy milk in a large bowl until creamy. Add flour, cocoa powder and baking soda to the bowl and beat again until well combined. Stir chocolate chips in to the batter. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Copycat Asian Style Eggplant Bowl 🍲 I made this bowl after seeing a similar one on the page of my friend Nisha @cookingforpeanuts a while ago 🍆 Very similar to my recipe for Sesame Garlic String Beans, this is for all of the eggplant loving peeps like me 💜💜 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
✖️RECIPE for Sesame Garlic Eggplant: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 Tablespoon sesame oil
1 Tablespoon red miso paste, or tamari
1 teaspoon maple syrup
2-3 cloves garlic, minced
1 Tablespoon water
1 medium eggplant
Whisk sesame oil, miso paste, maple syrup, garlic and water in a small bowl. Wash eggplant and slice into 1/2” thick rounds.  Heat a large nonstick pan and add eggplant, brushing each side lightly with sauce. Cover and cook a few minutes until the eggplant begins to soften and flip over, brush with more sauce and repeat until eggplant is done! We enjoyed the eggplant with short grain brown rice + edamame + leftover kale 🍆 ⠀⠀⠀⠀⠀⠀⠀⠀⠀

✖️RECIPE for Simple Ginger Pumpkin Soup:
1 kabocha squash, also know as Japanese pumpkin 🎃 
1 heaping Tablespoon mild curry powder 
1/2 inch knob of fresh ginger, peeled and finely diced 
4 cups vegetable broth
1 can light coconut milk, 1/2 cup set aside for drizzle
Preheat your oven to 450 degrees. Cut your kabocha squash, seed, and peel if you wish. The peel is completely edible, but you can peel if you want your soup to be bright orange. Place squash on a parchment lined baking sheet and bake for 40-60 minutes until soft.
Let cool until just warm. Add to a blender with the vegetable broth and purée in batches, or use a hand blender to purée in the soup pot. Pour puréed squash into a soup pot, add curry and coconut milk, stir well and heat. Add salt and pepper to taste. Serve with reserved coconut milk drizzled on top + roasted chickpeas or crust bread 🥖
