Oatmeal and smoothie bowls have been breakfast staples of mine for quite some time now for many reasons, mainly because they are canvases waiting for a topping masterpiece to happen as I like to say. 🥣🤪 As one of the most important meals of the day, I want to make sure it’s one that will nourish, energise and fuel me for the day to come. Though many people tend to gravitate towards having the same meal or combo over and over again which ends up with them not being excited to have breakfast at all... I MEAN HOW!? I basically go to sleep for no other reason than to fast forward time to breakfast! 😴

PLANT BASED BURGERS! 🌿🍔 Every single day, more people are realising that consuming large amounts of meat is not sustainable for our environment, nor healthy for our health. FACTS!!! 💥 Although with the plant based scene/market exploding, we are seeing new vegan options and products everywhere. But just because something is labelled vegan, or plant based or whatever, does not mean that it is good for you. Half of these products are made all sorts of chemicals, fake foods and god knows what else. To be honest, I can’t even pronounce half of the ingredients on these ingredient lists myself, probably need the help of a chemist to understand some of them. 👨‍🔬😅 Maybe thats a sign that I shouldn’t be putting them in my body on a regular basis... Anyways, I’m all for these vegan products, and some are actually really great. They serve a big place in allowing consumers to get what they want from real meat, such as the taste, the texture, the feel, etc. without actually causing harm to the environment, themselves or other living beings. Do you agree? But some of them are absolute JUNK!!! 🤮 Which is why I want to show you that creating your own wholesome plant burgers made with simple veggies, grains, plus other goodies at home is much easier than you might have thought previously. Just look at the texture on this one... And its made with nothing but good quality whole foods. Im in the process of experimenting and creating some tasty plant burger recipes for you all so stay tuned!!! 🤙😜

FLAXSEED HACK... Are store bought pre ground flaxseeds as nutritionally powerful as buying whole seeds and grinding them yourself? 🤔 NOPE, NOT AT ALL! While they both probably have similar amounts of total protein, fat, fibre and all that, they may contain much lower levels of the almighty omega 3 fatty acids that we’re all after when we consume flaxseeds. This is because pre ground flaxseeds are likely to have been exposed to oxygen longer, and oxygen causes these fats to breakdown, so does heat and light. So to retain and reap the nutritious power that’s inside these little seeds, buy your flaxseeds whole and store them in an air tight container, then only grind what you need to relish that freshness! 🙌

And once you do, keep the ground stuff in the fridge or freezer as this will help prevent them from going rancid, which in turn can reduce its nutritional power too. When you do this, you’ll notice a huge difference in the taste and smell of them compared to your standard pre grounded ones in the store. WAY BETTER! 🤩 Note that whole flaxseeds are very hard and will pass through the body undigested if you don’t grind/mill them before consuming them, this is a must for “freeing” the nutrients inside the flax so your body can absorb them fully, otherwise its pointless. I wish I knew this a while back, but have only recently found out for myself, I guess those are some of the perks of going out with a nutritionist! 🤓

Ain’t nothing like some good ol’ TRUFFLE LOVIN! 😍 If you’re like me and are an absolute sucker for all things truffle related, you’ll go crazy over this one. An amazing simple pasta dish ideal for lunch or dinner, made with garlicky mushrooms and spinach flavoured with truffle oil 🍄 MMMM! Making creamy, white sauces with tahini is my go to, since its a lot more nutritious and flavoursome than your standard dairy free cream. This pasta, a bottle of whatever you fancy, and someone you love are all you need for a lovely date night in! 🍽😏

Details: spaghetti pasta, 2 garlic cloves, spinach, mushrooms, 2 tbsp tahini, 2-3 tbsp nutritional yeast, chilli flakes, salt + pepper and truffle oil.

Directions: Cook the pasta in boiling water for required time. While the pasta is cooking, begin frying the sliced mushrooms in a pan over medium-high heat, with chopped garlic. Shortly after add in the spinach and continue cooking until done. Once the pasta is ready, drain it leaving a tiny bit of pasta water in the saucepan, then in the same pan, add in the sautéed spinach + mushrooms, more chopped garlic, nutritional yeast, tahini, truffle oil, chilli flakes, salt + pepper to taste and mix thoroughly. Then serve with in a bowl with another drizzle of truffle oil and ENJOY! 🍝

Apple & Cinnamon Raisin Oatmeal Cookies! 🍏🍪 If you’re ever rushed in the morning, grabbing one of these breakfast cookies on your way out the door will be one of your best choices you make that day, I promise! 😋 All it takes is a little prepping in advance to have these delicious, wholesome bites waiting for you. THEY TASTE BANGING! Plus they’re perfect for the autumn season! 👌🍁🔥

Details: 1 flax egg, 1/2 cup maple syrup, 1/4 cup coconut oil, 1/4 cup almond butter, 1 tsp vanilla extract, 1.5 cups rolled oats, 1 cup wholemeal flour, 1.5 tsp baking powder, 1-2 tsp cinnamon, 1/4 tsp salt, 1 medium grated green/cooking apple, 1/2 cup raisins.

Directions: In a large bowl whisk together the flax egg, maple syrup, almond butter, coconut oil, and vanilla extract until smooth. In a separate bowl, add in the oats, flour, baking powder, cinnamon, and salt and mix. Then transfer the wet and dry ingredients into one bowl and mix until well combined. Lastly, fold in the grated apple and raisins until they are evenly distributed and mixed in.

Then place the bowl into the refrigerator to chill for 30 minutes. Preheat the oven to 180C/350F, and line a baking sheet with parchment paper. Using a spoon, place the cookie dough into 10 rounded scoops onto the prepared sheet and flatten/shape slightly. Place the tray into the oven and bake for 15 minutes, or until golden. Cool the cookies for at least 10 minutes before serving 👨‍🍳👍

THICK & CREAMY OATMEAL TUTORIAL 🤩🥣 Swipe for video! 👉 I often get asked on here how do I get my oats so thick and creamy, so here is a lovely little video to show you how I make them from start to finish. You’re welcome! ☺️

Now the key to making a glorious bowl of oats is firstly determining your desired consistency/texture. I find that a ratio of 1:2 works very well, 1 cup of oats to 2 cups of water. Start by placing the oats + water in a saucepan and bring them to a slight boil, then reduce the heat to medium-low and cook further until you are happy with the creaminess, thickness and texture. If you want them runnier, add in more liquid, if you want them thicker, cook them longer, simple. 👍

The next step is to make sure your actual oatmeal base tastes good, not just what you put on top of it in the form of toppings and drizzles, otherwise whats the point. I love flavouring my oatmeal whilst cooking it with various spices like cinnamon, nut butters, mashed fruits like banana, or powders like maca and lucuma, and even a pinch of salt to bring up the flavours in this case. 👌🔥 And I always cook my oats with plain water, but you can also do this with plant milk instead if you wish, it may add to the taste and creaminess too.

Finding new places to eat is one of my favourite ways to explore new cities. Mainly because I’m a huge foodie at heart, if you couldn’t tell already 😉 and so eating is obviously my favourite hobby, but also because it takes you to parts of a city that you necessarily wouldn’t see otherwise. Ever thought about making a healthy, vegan, protein-packed homemade version of Nutella? 🌰🍫🤔 Well your dreams have come true. No this is not a joke, I am deadly serious, plus you can make it at home within 20 mins. Its sinfully sweet and loves you back, unlike all those other processed store bought chocolate spreads. 😜 If you’re anything like me and you adored Nutella whilst growing up, you sure won’t be leaving that spoon alone with this chocolatey goodness around you in the house. Inspired by the one and only @thebigmansworld MMMMM! 🤤

Details: 2 cups hazelnuts, 2 tbsp cacao powder, 2-3 tbsp coconut sugar, 1/2 scoop @vivolife raw cacao perform.

Directions: Preheat oven to 180C/350F. Place and spread the hazelnuts on a baking sheet and roast them for 10-12 minutes. Place the hazelnuts into a clean towel, pinch the corners in a centre, and shake/rub them to peel off the nuts skin. Do this until most of the skins have easily fallen off the hazelnuts. Transfer the skinned roasted hazelnuts into a food processor and process on high speed for 5 minutes. Blending time depends on your blender, some may take a little longer. Be patient though, it may look like flour at the start, but after a while the nuts will release their oils and it will soon be silky smooth. Stir through from time to time using a rubber spatula and keep blending until you reach a smooth and creamy hazelnut butter. Add your cacao powder and coconut sugar and continue to blend until fully combined. Then add in 1/2 scoop of @vivolife raw cacao perform and blend further until combined. Transfer the spread into a jar or air tight container and enjoy! 🤩

Its sinfully sweet and loves you back, unlike all those other processed store bought chocolate spreads. 😜 If you’re anything like me and you adored Nutella whilst growing up, you sure won’t be leaving that spoon alone with this chocolatey goodness around you in the house. Inspired by the one and only @thebigmansworld MMMMM! 🤤 • Details: 2 cups hazelnuts, 2 tbsp cacao powder, 2-3 tbsp coconut sugar, 1/2 scoop @vivolife raw cacao perform. • Directions: Preheat oven to 180C/350F. Place and spread the hazelnuts on a baking sheet and roast them for 10-12 minutes. Place the hazelnuts into a clean towel, pinch the corners in a centre, and shake/rub them to peel off the nuts skin. Do this until most of the skins have easily fallen off the hazelnuts. Transfer the skinned roasted hazelnuts into a food processor and process on high speed for 5 minutes. Blending time depends on your blender, some may take a little longer. Be patient though, it may look like flour at the start, but after a while the nuts will release their oils and it will soon be silky smooth. Stir through from time to time using a rubber spatula and keep blending until you reach a smooth and creamy hazelnut butter. Add your cacao powder and coconut sugar and continue to blend until fully combined. Then add in 1/2 scoop of @vivolife raw cacao perform and blend further until combined. Transfer the spread into a jar or air tight container and enjoy! 🤩 - 2 months ago

Still trying to find my nipple, think I left it on a beach somewhere in Portugal 🔥💦 One thing I never want to let go of is that inner, childlike playfulness and imagination we all have as kids, which we eventually tend to disconnect from as we get older. I’ll carry this with me everywhere I go. But why go about life so seriously 247? When you can do it with so much more joy whilst smiling, playing and being a silly idiot who doesn’t filter anything or care about what others will think... just how that care free child we once were did! 🤪

AVOCADO TOAST 🥑😍🍞 Since I have literally had this classic masterpiece almost every single day for the past 3 months... @vegainsfood and I thought it would be wise to show you how its done from yours truly! 😉 Such a basic, easy and healthy eat that takes only a couple of minutes to put together. Though you may learn a thing or two about my process, especially the trick of “mashing” it whilst its still in the skin, saves time and less mess. 👍 But when it comes to avocado toast, there are so many ways to toast it up with different kinds of toppings, sprinkles and drizzles, yet for me, the most satisfying is always the simplest. 😋 Ohhh and when people ask me why I’m thriving, so full of energy, and why my skin looks like its glowing, I just respond by saying “avocado” 🥑🤷‍♂️ ENJOY! 💚

I believe everyone who walks into our lives seemingly and coincidentally is actually there for a good reason. To support us, to teach us a lesson, to love us, to help us grow. Some things are too damn incredible to be coincidences... If so, nurture them, love them and tend to them with all your heart, just like watering and loving a plant! 🌿 Because its most likely they are there for a reason, sometimes a reason which may be too magical to comprehend!!! 🔮☺️
