Sorta #latergram, sorta not. This was last night’s bowl, but I just had the leftovers for dinner, so whatever. It’s my take on the @budgetbytes “Beef & Cabbage Stir Fry” with TVP instead of beef. So, so good. I upped the sauce by half because I had a sneaking suspicion that we had more cabbage than called for. .

This is spicy and totally delicious. I’ll make it again. Next time with Gochujang instead of siriracha - I personally think sriracha has had its day in the sun, and it’s time for Gochujang to have a spotlight. .

First time trying almond milk yogurt and gotta say, it didn't disappoint.  Added it atop a colorful ass fruit salad (I promise there's grapes and orange slices hiding in there) with some crumbled tofu for an actual meal, which made for a nice change of pace. #CookinWithTim • Want the recipe? It’s been weeks since I’ve ran, I don’t even remember running at all this month 😳 I’ve sick, working a lot and had too many excuses. So after a 10 hour day delivering mail in the wet cold I decided to just go for a run cause I wanted too! Never judge where you are now with where you might be in a day, a week, a month or even a year.

One week after my surgery, I had my first PT appointment and I couldn't do heel slides without help. One week later, I was able to do heel slides.
4 weeks after surgery, my right ass cheek was so tight, I couldn't cross my leg to put on socks or tie my shoes. After a couple weeks of consistently doing everything I could, my butt muscles figured it out and I could finally cross my leg. It still took several more weeks for that move to feel comfortable though.
I never thought I would do a lunge again. A couple weeks ago I didn't even think a thing about it, and started doing lunges.

Following my PRP, I seriously wondered if I would ever walk normally again. My foot hurt in places I've never experienced pain. My foot and ankle were so weak. Getting out of bed every morning, I was grabbing onto the walls for stability. 4 weeks later, I was finally walking without a limp.
For the past 2.5+ years, I never thought I would walk a day without PF pain. I've had a few pain free days.
Multiple times, I've felt that running was in my past and only a hope for the future. I really thought my career might be over. My first walk/jog was Nov 1st and I've done a few more without an increase in my pain.

Moral of the story: never say never. I've said 'never' so many times this year. And every single time, I've been proven wrong. By me. By my #persistence #dedication and inability to give up on my dreams, I've continued to show up in what ever way possible, and that's what's allowed me to break through every 'never' again wall.

🌟Tip 1. You can go cold turkey or you can slowly transition and cut one item out at a time (red meat, chicken, fish, dairy, eggs, etc.) For me, the transition took place over years. Take as much time as you need and don’t get caught up or feel guilty if you can’t completely go cold turkey or decide not be 100% plant-based. 🌟
🌟Tip 2. Keep it simple. Eat the rainbow. Focus on eating whole foods such as veggies, fruits (berries), leafy greens, beans, whole grains, healthy fats (ie. the daily dozen) most often. It is okay to eat plant-based meats or vegan junk food once in a while. 🌟
🌟Tip 3. Make sure you eat enough calories to sustain your activity. Especially for endurance runners, we need the energy to fuel our workouts, runs, and for recovery (see my previous blog post about the dangers of under fueling). Since whole plant-based foods are low calorie nutrient dense foods, you may need to eat a higher volume of food or eat more often during the day to meet your caloric needs. Listen to your body and eat when you are hungry. .

The past week I honestly struggled with motivation...trying to force myself to complete workouts only to skip and feel sort of guilty. Fitness shouldn’t be a chore...it should make you feel GOOD. I chose to take a few days off and it was so necessary. I woke up this morning feeling ready to go and had an awesome run (in layers) because it’s finally cold here in Florida!

I did it!! The Sangria 5k!! I’ve been wanting to do this run for the last four years but something always seemed to come up on the same day that prevented me. But I did it!! I haven’t ran in four years! FOUR YEARS! I’ve never been a fast runner, so I didn’t expect a lot from myself. But I did it! I had a number in my head and I met that time! So I’m good here! And boy was I sore for the rest of the day and the whole next day! 🤣. I did it for the bling! And the Sangria! Let me tell you, that sangria after was amazing! Nothing like a glass of wine at 9am! 🍷
