Posh curried beans and greens on toast 😍😍 Delicious lunch providing you with #wholegrains , #protein , #fibre , #antioxidants , as well as numerous vitamins and minerals, including calcium!
The bean mixture makes 2 servings; I'll be using my leftovers to make a burrito for lunch tomorrow.
1/2 small red onion
1/2 a red pepper
1 clove garlic
1/2 cup chickpeas
1/2 cup kidney beans
1 cup Kale
1 cup spinach
1/3 cup tinned tomatoes
2 TSP mild curry powder
1/4 TSP turmeric
1 slice seeded wholemeal bread
Sauté the onion, garlic, and pepper in a little water for approx 7 minutes until softened
Put bread in to toast
Add the beans, chickpeas, kale, and spinach and sauté for a further minute
Add the remaining ingredients and sauté for another minute to let the flavours combine
Pop half on your toast and save the other half for another day.
Get your veg on!
