🥝🍌CASHEW, BANANA AND CACAO SLICES🥝🍌 150g cashews ♡ 3 bananas ♡ 60g oats ♡ 1tbsp cacao powder ♡ 1/2 tsp bicarbonate of soda ♡ 1/2 tsp vanilla extract ♡ 1tbsp cacao nibs ♡

Put all the ingredients in a food processor, whizz for few minutes until fairly smooth.
Transfer the mixture to the non-stick tin. Bake for 20-25 minutes. Decorate with your favourite fruit and melted chocolate.

Vegan Raw Blueberry Cheesecake by @byanjushka

Recipe for a 16cm baking form

Lightly grease a 16cm round springform tin with coconut oil and line base (and sides) with baking paper

For the Crust

70g almonds
50g dates
1/2 tsp Vanilla extract
1/2 tsp coconut oil
Place in a food processor and mix it until you get the ures of crumbs
Press the mixture into the base of your baking form and pop into the freezer while you prepare the filling

For the filling

200g raw cashews (soaked at least for 8 hours)
200g Coconut cream
45g Coconut oil
40 sweetener (i used agave nectar)
pinch of salt
1/4 tsp vanilla extract
.
Blend at high speed until smooth (10-20 minutes).
Pour  the mixture on top of the crust, add some blueberrys (about 80g) and place it in the freezer for 30-40 minutes.
Meanwhile place 200g fresh or frozen raspberries to the other half of the cream and blend until smooth.
Pour it on the top of the cheesecake layer and return to the freezer for 45 minutes

2. Mix in all the spices + cook for 1 min. 
3. Add in the can of tomatoes, tomato paste, coconut milk, chickpeas, salt + pepper + stir.
5. Heat until boiling, then turn down to a simmer and cook for 10-15 minutes. Serve with rice or quinoa, coriander + fresh lime juice! Enjoy 😍

​Beetroot Ravioli w/Cashew Cream Filling by @vegaliciously 🤤

INGREDIENTS (for 3 servings)
240 g flour
200 g fresh beetroot
1 dl water
1 tsp salt
—
300 g cashew nuts (soaked for 4 hours)
1 1/2 tbsp nutritional yeast
a splash of water
salt and pepper
METHOD:
1. Steam the beetroot for 20 minutes. let cool down completely.
2. place the beetroot in a food processor and process until creamy. Add in flour, salt and (little by little) water and process until the dough sticks together. 
3. Cover the dough and let rest for 30 minutes.
4. for the filling, place cashew nuts, nutritional yeast, water and salt and pepper in a food-processor and process until perfectly creamy. cover and set aside.
5. Using a pasta machine roll out the dough until it’s about 2-3 Millimeters thick. 
6. Press a glass into the ravioli sheet and set the ravioli circles over a floured surface.
7. Each raviolo is made of 2 circles; put 1 tsp full of cashew cream in the middle of a circle, moisten the edges of the dough with a pastry brush and cover with another circle. 
8. Press the edges with a fork so that it wont open while boiling.
9. Boil for 5 minutes and serve with a dash of olive oil and some cheeze.
10. Enjoy!

​Tofu Curry recipe:
1 clove garlic, minced
1/2 tsp garlic masala
200g firm tofu, crumbled
1/2 can canned tomatoes
1/2 can coconut milk
1 tbsp tamari 
1 tsp turmeric
1 tsp curry powder
1/2 tsp cumin
Salt and pepper to taste

Add the garlic to a non-stick saucepan and sauté for around 2 minutes, until fragrant. Add the garam masala and tofu and cook for 2-3 minutes more. Then, pour in the canned tomatoes with the coconut milk, tamari, turmeric and curry powder. Season to taste with salt and pepper. ​Tofu Curry by @earthofmariaa  😋 . ​Tofu Curry recipe: 1 clove garlic, minced 1/2 tsp garlic masala 200g firm tofu, crumbled 1/2 can canned tomatoes 1/2 can coconut milk 1 tbsp tamari 1 tsp turmeric 1 tsp curry powder 1/2 tsp cumin Salt and pepper to taste . Add the garlic to a non-stick saucepan and sauté for around 2 minutes, until fragrant. Add the garam masala and tofu and cook for 2-3 minutes more. Then, pour in the canned tomatoes with the coconut milk, tamari, turmeric and curry powder. Season to taste with salt and pepper. Lemon Basil Tagliatelle (Linguini)! by @veganfoodiecooks 🚨🚨Recipe: *2 tbsp vegan butter
*2 cloves of garlic
*1 tsp thyme or oregano
*1 whole corn
*1 lemon (juice and zest)
*2 tbsp flour
*1 cup or soy milk
*1 tsp salt and pepper
*Handful of basil
*1-2 cups of water from tagliatelle
*250g (8oz) tagliatelle (linguini pasta) cooked

METHOD:
•Cut the corn off the cob.
•Melt butter in the pan and add garlic, thyme and corn and stir fry for about 5mins.
•Add flour and mix well till it completely dissolves, then add soy milk, season it and stir until it thickens.
•Add basil, lemon juice and water from pasta (depending on how thick you want the sauce to be)
•Serve right away
