Finally cooked up that @noevilfoods Comrade Cluck #seitan that I bought from @mylkguys online (link in Bio). Sautéed with onions, olive oil, @pfchangs Teriyaki, and @publix organic veggie broth. You know I added sriracha.

Set the Seitan aside and sautéed Kirkland stir-fry veggies from @costco in pretty much the same seasonings. Then combined, added more broth and more teriyaki marinade, then simmered for 15 minutes on a very low flame. 🌱😋🌱

Light fluffy baked rice full of umami flavour.....Baked Mushroom and Rainbow Chard Cinnamon Rice #umami #basmatirice #veganmeals #vegansofig #vegans #vegetarian #plantbased #veganhealth #healthyfood 
4 cups organic basmati rice (washed and drained)
5 garlic cloves finely chopped
1 red onion finely chopped
1 leek (white part) finely sliced
400g mixed mushrooms finely sliced
1/4 cup sake or white wine
Bunch organic rainbow chard sliced (1cm width) - both stems and leaves
2 cups umami broth (or mushroom stock or vegetable stock)
2 tspns umami and ginger paste (optional)
3 cups filtered water
1 can fire-roasted diced tomatoes
1 tablespoon vegan Worcestershire sauce/balsamic vinegar
1/2 cup chopped fresh parsley
Zest of a large lemon
1 tspn celery salt
3 dried bay leaves
1/2 tspn ground sage
1 cinnamon stick
1 tablespoon organic stock powder or low sodium ‘chicken’ stock cube
Salt and white pepper 
Toasted pine nuts to garnish 
Preheat the oven to 180•C. I used a large cast iron rectangular pan to cook this dish on the stove then put it straight in the oven to finish cooking. Place the pan over medium to high heat. Add 4 tablespoons of EVOO and 2 tablespoons of vegan butter. Once hot, add the onions, garlic, mushrooms and leek. Fry until the onions are translucent and the mushrooms are starting to caramelise. Add the sake or white wine. Scrap any bits off the bottom of the pan to incorporate. Sauté for 2 minutes then add the rainbow chard and lemon zest. Sauté for a further 3 minutes then add the rice. Stir then add the stock, tomatoes, Worcestershire sauce, bay leaves, cinnamon stick, celery salt, sage, water and stock powder or cube. Season with a little salt and white pepper. Bring to a gentle boil, check seasoning, stir and then cover well with greaseproof paper and foil (I do not like aluminium foil coming into contact with food so I always use greaseproof paper as a separator. Place in the oven for 22 minutes, remove foil, fluff with a fork and recover for a further 5 minutes before serving with toasted pine nuts and fresh parsley.

Quick and easy broiled turkey melts all done on a sheet pan in just 10 minutes. Perfect for Thanksgiving leftovers too!

INGREDIENTS
Hearty, artisan bread like sourdough or piccolo como sliced 1/2 inch thick
Turkey breast, thinly sliced (about 3 slices per sandwich)
Swiss cheese, thinly sliced (1 square slice per sandwich)
White cheddar cheese, thinly sliced (I used Tillamook, 1 square slice per sandwich)
Dijon Mustard
Chive and Onion cream cheese spread (I used Philadelphia)*
Butter lettuce, roughly chopped

DIRECTIONS
1. Turn on oven broiler and either grease a baking sheet  or prepare it with parchment paper.
2. Spread a dollop of dijon mustard and cream cheese on sandwich slices.
3. Top one side with cheeses and the other side with turkey slices.
4. Broil for 5-7 minutes, until bread starts to turn golden and cheeses are bubbling.
5. Remove from heat and top cheese side with desired amount of lettuce. Combine the sides together to make a sandwich, slice in half, and serve immediately. -

Working a night shift on a Sunday, and for the next 3 days. Cranked out some bunless cheese burgers for me and me wifey while she was working on report cards. 🌱😎🌱

These @lightlifefoods vegan burgers were very tasty with a great texture. Sitting in the frozen meat section of @publix next to the Beyond Burgers. A dab of @annieshomegrown Worcestershire on each during grilling.  @followyourheart Smoked Gouda melted on top. 🌱😜🌱

Sometimes events or situations abruptly change and you've got to shift your day accordingly. I started the day just before 5 and got some meal preps, breakfast, lunch and cleaning done. I was going to spend the day doing some client work and laundry but I got a call from my daughter's school saying she was complaining of stomach pain and headache and was crying. I got her quickly and she took a shower and fell into bed, sick and exhausted. .

I'm grateful for times like these that help me exercise unconditional love and slowing down. Unconditional love doesn't only come when times are good, but is so needed when situations suck. People remark that unfortunate events make it clear to them who their closest are. And honestly people are all so busy and they may have blinders on and may be oblivious to your pain. Throw back to almost a year ago to my smoothie bowls :)

Sometimes events or situations abruptly change and you've got to shift your day accordingly. I started the day just before 5 and got some meal preps, breakfast, lunch and cleaning done. I was going to spend the day doing some client work and laundry but I got a call from my daughter's school saying she was complaining of stomach pain and headache and was crying. I got her quickly and she took a shower and fell into bed, sick and exhausted. . . I'm grateful for times like these that help me exercise unconditional love and slowing down. Unconditional love doesn't only come when times are good, but is so needed when situations suck. People remark that unfortunate events make it clear to them who their closest are. Today’s brunch was this surreal Eggy Tofu Scramble with black beans and fresh tomato salsa. The only thing is you’ll need some Himalayan black salt, so I don’t know if you wanna go hike for it or order online from the link in the recipe ...🤣 just make sure to use it if you want eggy flavor haha

We’ve had a Costco membership since the Dallas Texas Dreams gymnastics 🤸🏽‍♀️ days for Jade in 2015. Trying to decide if we should renew it in December so we did some grocery shopping 🛒 on Sat after breakfast. 🌱🤔🌱

First time grocery shopping in Costco for me in over 20 years! It was crowded in there, especially near the free samples. I was impressed with what I found and need to go back and explore some more. 🌱😎🌱

Sams Club 15 minutes away
Costco 20 minutes away

Fresh pico, avocado, my black bean recipe which I’ve shared before, fresh cilantro, fresh jalapeño, olives, cashew cream drizzle 
Assemble chips and cheese and baking pan and bake at 350 for about 5-7 mins until cheese is melted. When ready take out and assemble nachos and serve. There’s no fancy order here!

Trust if you make these for game day NO ONE will be disappointed!!

“The Cookie Monster”🍪Delicious almond, oat, chocolate and sea-salt flake cookies. Crunchy on the outside and soft on the inside, apart from being vegan, gluten-free and, of course, refined sugar-free. I can’t think of a better way to end the weekend!

After a month and a half of running around, I’m finally back in London! Although it won’t last very long, since I’m going back to Spain next month to give a live showcooking at @biocultura Madrid and for my book’s release party in Barcelona. In exactly 4 days my book will be available at shops, and to everyone that purchased it online, you will also be receiving it by then. I’m literally counting down the days on my calendar! 😘

. “El monstruo de las galletas” 🍪Deliciosas cookies de almendra, avena, chocolate y escamas de sal marina. Son crujientes por fuera y blanditas por dentro, además de veganas, sin gluten y por supuesto sin azúcar refinado. No se me ocurre una mejor forma de despedir el fin de semana.
