In need of an easy & yum dinner recipe this weekend? Make this spring asparagus, new potato, mushroom & walnut-pesto salad!! Went down a treat with my family 🙋🏼♀️
- 2 bunches of asparagus spears, woody ends snapped off
- 4 big handfuls of new potatoes
- 2 big handfuls of button mushrooms, sliced
- 1/2 tsp salt
- basil/coriander leaves to garnish
- 4 packed cups of fresh basil
- 1/4 cup walnuts
- 1/2 cup Parmesan cheese
- juice of 1 small lemon
- salt, to taste
- olive oil, enough to make thick paste
Add salt to a large pot of water and bring to the boil. Add new potatoes and boil for 15 mins, or until nearly cooked. Add asparagus and mushroom to the pot for the last few minutes of cooking time, then remove from heat and drain liquid.
While potatoes are cooking, prepare the pesto. Add all ingredients to a blender and blitz together, tasting along the way and adding in more salt/olive oil until you’ve reached your desired consistency & taste.
Toss pesto gently through the asparagus, new potatoes and mushrooms until vegetables are well coated. Garnish with fresh basil/coriander & serve while warm.
