Ija’tz Cooperative (EE-ha-ts) is located in the Guatemalan department of Sololá on the shores of the crater lake, Lake Atitlán, surrounded by four dormant volcanoes.
Ija’tz began in 1995 and continuously created economic opportunity for farmers in the surrounding community. However, in 2010 the area was hit by a severe storm and wiped out parts of their operation. But they have been rebuilding and gaining momentum ever since!
In 2015, our importing partner De la Gente, started to work with Ija'tz in order to bring their delicious coffee to new markets, including us! De la Gente helped them build composting beds to increase yield, and with the help of UW Eau Claire, they built fermentation tanks, as seen below.
Finally, they are completing new and improved concrete drying beds in order to encourage greater consistency and quality. This will improve the SK Community's experience with the Natural Process coffee we source. This year's Natural was very good, and we can't wait for next year's renovations.
