🍑 I meant to post this peach cobbler in the thick of peach season—I made it 3 times. I hope you can snag some peaches and make some before we officially say goodbye to Summer. 🥧
-6-8 organic peaches (sliced into wedges, skin on)
- 1 tablespoon raw honey (optional)
- 6 tablespoons melted (room temp) organic butter or ghee
- 1/4 cup coconut sugar
- 2 teaspoons vanilla
- 1 cup @bobsredmill gluten free flour
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/4-1/2 cup @michelesgranola (any flavor)
You can pre cook the peaches in honey for 10 minutes, or just add the peaches to the dish without cooking. Either way is fine. 😋
Slice peaches down the center and remove the pit. Then slice the peaches into thick wedges.
Place the peaches in a 13x9 baking dish.
Mix the butter, sugar, and vanilla in a bowl. In a separate bowl mix the flour, salt, and baking powder. Add the wet to the dry and mix well until a wet dough forms. Spread/place the dough on top of the peaches. At 25 minutes, sprinkle the granola on top and bake for another 5 minutes.
Bake at 350 for 30 minutes until bubbling.
Let cool before enjoying with your fav (n)ice cream.
