This dish makes for a VERY SIMPLE holiday side dish, so consider adding to your Thanksgiving and Christmas menu!⠀

Did you know:⠀
Mushrooms have cancer-fighting properties. Mushrooms are immunity-boosters, they can help lower cholesterol, they're high in B and D vitamins, and can help relieve inflammation.⠀
⠀
To take advantage of all the available health benefits of mushrooms, you really should cook your mushrooms.⠀
Here's why:⠀
"The cell walls of mushrooms are tough, making it difficult for the digestive system to get to all the nutrients inside them. Mushrooms often contain chemical compounds that can interfere with digestion and nutrient absorption. Sufficient cooking breaks down the tough cell walls, inactivates the anti-digestive elements and destroys many toxins," according to WebMD.⠀

Rachel's Tips:⠀
I recommend using a high quality white wine (one that you would drink) NOT cooking wine, for best flavor.⠀
⠀
If you do not want to use wine, then vegetable broth or chicken/beef bone broth may be used in it's place.⠀

Ingredients:⠀
2 lbs. cremini mushrooms⠀
1/4 cup white wine, or vegetable broth/chicken bone broth⠀
6 cloves fresh garlic, minced⠀
2 Tbsps fresh thyme chopped⠀
1 Tbsp chopped rosemary⠀
2 Tbsps fresh parsley chopped⠀
2 Tbsps ghee, pasture raised butter, or olive oil⠀
1/4 tsp fresh ground pepper ,or to taste⠀
1/2 tsp sea salt, or to taste⠀
⠀
Instructions:⠀
⠀
Trim the mushroom stems to 1/4-inch and using a mushroom brush clean thoroughly to remove any dirt.⠀
⠀
In a large skillet over medium-high heat, melt your ghee.⠀
⠀
Add mushrooms, and cook, stirring gently, until mushrooms are golden brown and tender, about 5-10 minutes, depending on size and personal preference.⠀

Stir in your minced garlic, thyme, rosemary, sea salt and black pepper.⠀
⠀
Pour in your wine, and continue to cook for an additional minute or two, or until the liquid is cooked down by half.⠀

Pan-Seared Chicken and Broccolini⠀⠀⠀⠀

1	and 1/2 pounds chicken tenderloins*, thawed⠀⠀⠀⠀
salt and pepper⠀⠀⠀⠀
1/4	cup flour⠀⠀⠀⠀
2-3	tablespoons olive oil⠀⠀⠀⠀
1	pound broccolini, trimmed and sliced in half lengthwise⠀⠀⠀⠀
water and salt⠀⠀⠀⠀
1	tablespoons olive oil, pluse more if needed⠀⠀⠀⠀
1	very large shallot, diced⠀⠀⠀⠀
2	cups chicken broth**⠀⠀⠀⠀
4	sprigs fresh thyme, plus more to garnish⠀⠀⠀⠀
1/2	cup heavy whipping cream⠀⠀⠀⠀
2	tablespoons dijon mustard ⠀⠀⠀⠀
Preheat your oven to 170 degrees F, or the "keep warm" setting. Pat the chicken dry and sprinkle both sides with salt and pepper. Sprinkle the flour over the chicken to get them coated in flour. In a large saucepan, heat 2 tablespoons olive oil over medium-high heat. Sear the chicken for 4 minutes; flip and cook another 2-4 minutes, until cooked through. Add more oil to the pan before flipping if it is dry. Transfer the chicken to a sheet pan or other oven safe dish and put it in the warm oven.⠀⠀⠀⠀
While the chicken is cooking, bring a medium pot of salted water to a rolling boil over high heat. (Add at least 2 teaspoons salt. It should taste like seawater.)⠀⠀⠀⠀
Prep the broccolini: trim about 1 and 1/2 inches from the bottom stems, and remove any leaves. Slice any larger pieces lengthwise so they are all a similar size. When the water is boiling, add the broccolini all at once, cover with a lid, and set a timer for 2 minutes. If the chicken is done and removed, add a tablespoon of oil to the hot pan over medium high heat. Transfer the broccolini from the water to the pan. Saute for 1 minute, then remove to the pan of chicken in the oven. Add the shallots to the hot pan over medium heat. Saute for 2-3 minutes until soft.⠀⠀⠀⠀
Stir in the chicken broth and thyme sprigs. Bring to a boil and then simmer for 3 minutes. Stir in the cream and mustard. Simmer for 5-6 minutes, until the sauce has reduced and thickened some. Remove from heat and discard the thyme stems. You can either add the warm chicken and broccolini to the pan or serve on a platter with the sauce over the top.
