- First course: Friðheimar Tomato Soup served on a buffet with sour cream, home baked bread, cucumber salsa, butter and fresh herbs
- Second course: fresh ravioli pasta with home made pasta sauce and pesto & fresh mussels cooked in our special tomato seafood sauce
- Third course: cheesecake with jam of green-tomato, cinnamon and lime

Everything I heard about our bodies and turning 35 has turned out to be true for me: it gets harder to lose weight and easier to gain it. Things start changing. As a foodie — it really bites. Lately I’ve been trying to find new ways not to entirely sacrifice enjoying the flavors and experience of food on my clean eating days. This paleo bagel by @misfitsbakehouse with @sperofoods sunflower seed (herb) “cheese” has been a winning breakfast for me these last two weeks. This morning I added some avocado and fried garlic (oil/salt). Might level up with a fried egg next time! Dairy free, gluten free — hard to believe this is basically just a plate of plants. 😳🌱

Parsnip & Japanese Sweet Potato Fries with Fresh Rosemary

Seriously nothing is better than roasting. Especially when it caramelizes two of my favorite root vegetables: parsnips and Japanese sweet potatoes.

Look for deep purple skin and white flesh to find these Japanese sweet potatoes, also known as murasaki. I prefer them over other yams because they blend the best qualities of a yam and regular potato- slightly sweet, yet not overbearing in flavor or too sugary so they can take on whatever flavor you add to it. 
And parsnips- this more unique alternative to carrots is packed with fiber (7g in 1 cup) and has a slight nutty and earthy taste that pairs perfectly with the fresh rosemary. “Recipe” (if you can call it that, it’s so simple) is in bio.

½ cup coconut sugar

Orange Glaze (optional)
1 cup powdered sugar
½ tsp vanilla extract
1-2 tbsp orange juice
Zest from 1 orange
1-2 tsp water, to thin to desired consistency

1. Preheat oven to 350F and line an 8x4 loaf pan with parchment paper. 
2. In a large mixing bowl, whisk together eggs, coconut oil, almond milk, maple syrup, orange juice, orange zest, and vanilla extract. Stir until combined.
3. Next, slowly stir in almond flour, coconut flour, baking powder, and baking soda until flour is just combined. 
4. Lastly, stir in your @madeinnature cranberries until incorporated.
5. Pour batter in 8x4 loaf pan and bake in the oven at 350F for 40-45 minutes or until top is nicely browned and a knife inserted comes out clean. Let cool completely before removing from loaf pan.
6. While loaf is cooling, make your glaze by whisking together all ingredients in a small bowl. Add on top of cooled loaf.
7. Garnish with additional orange zest if desired. Store in an airtight container at room temperature. Enjoy!

One of my favourite ways to enjoy seasonal fruits (like 🍎 + 🍐) is by sautéing them with a little coconut oil + warming fall spices. Have you guys tried doing this before? Today, I’m pairing warm sautéed pears with a spiced collagen chia pudding for a nutritious + balanced breakfast idea!

RECIPE: serves 2

Chia pudding:
½ cup chia seeds
1 tsp ground cinnamon
1 tsp ground ginger
2 scoops @genuinehealth Marine Clean Collagen (Unflavoured)
2 cups milk of choice
½ tsp vanilla extract
2 tsp honey (adjust to desired sweetness)

Pears:
2 bosc pears, cut into 1-inch chunks
1 tsp coconut oil
½ tsp ground cinnamon

1. Mix all dry chia pudding ingredients into a jar + stir. Add wet ingredients + stir/shake jar to combine. Place in the fridge for 2 hours or overnight.
2. Heat a skillet over medium + melt coconut oil. Add pear chunks + sprinkle with cinnamon. Sauté for 7-10 minutes until tender + slightly browned.
3. Serve chia pudding + top with sautéed pears. Add additional toppings like nuts, nut butter, an extra splash of milk, or try a little orange zest. Enjoy!

Recipe note: The chia pudding can be made the night before, and the pears can either be made right before eating (if you want them warm) or can also be made the night before + enjoyed cold (for a more grab-and-go style breakfast) ❤️.

Made my boyfriend and me a vegan stir fry for dinner last night! These vegan tofu dumplings are delicious 🤤 -
Details:
Broccoli and red bell pepper cooked a pan on medium high heat for ~12 mins with avocado oil, salt, pepper, onion powder and paprika. 
Rice cooked in instant pot on rice setting 
Tofu veggie dumplings from @smithsmarket - cooked in a pan on medium high heat for 2 mins each side and seasoned with avocado oil, salt and pepper!
