Leftover vegetable stew 🥦🍠☺️ If we all look at our fridge right now, most of us can probably notice that we have a few vegetables that have been sitting around for some time. Instead of throwing them away in the bin, when they’re not as fresh, you can use them to make delicious and healthy dishes. Today we’re sharing with you a recipe for a leftover veg stew that is perfect for those cold winter days.
100g of mushrooms
1 clove of garlic
100 g spinach
1 can chopped tomatoes
1 can chickpeas(any other legumes work as well)
1 tbsp. Curry paste !!this recipe can be made with basically every type of veg you have left in your fridge!! What to do?
In a pot heat 1 tbsp of cooking oil and add the minced garlic.
Sauté for 3-4 mins or until golden.
Add your garlic, curry paste and incorporate well.
Add the other veggies you are using, along side with the chopped tomatoes and 1 cup of vegetable stock
Stir and leave to simmer for 20 mins or until all the liquid has evaporated and the veggies are ready.
Lastly add the spinach and legumes in the pot and leave to simmer for 5 more minutes .
