Throwing it back to this cozy fall-inspired pan of Shakshuka we had for brunch a few weeks ago using some chopped kale & leftover pumpkin & thinking of making it again for dinner tonight🤩
This meatless version comes together super quick in one skillet using a few simple spices, veggies, canned tomatoes, eggs plus whatever toppings you like or have on hand 🥰🍳🍅🥑🌿 .

avocado oil OR ghee
1 shallot, diced
2 cloves garlic, minced
1 small red bell pepper, seeded & diced
1 24 oz @primalkitchenfoods roasted garlic marinara sauce OR 28 oz can, diced tomatoes OR peeled plum tomatoes, slightly drained (compliant brand as needed)
3 Tbsps pure #pumpkin puree (optional)
1/2 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp dried oregano
1/4 tsp dried basil
1/4 tsp cumin
Dash cayenne - optional for extra heat
1/2 cup chopped fresh kale
4 large eggs
Fine sea salt + pepper, to taste
Fresh parsley/cilantro/microgreens, for garnish
Avocado slices, for serving
Heat oil or ghee in a large skillet over medium-heat.
Add shallot & peppers and sauté for 2-3 minutes Add garlic & spices & cook for another minute. Pour in sauce OR drained canned tomatoes & optional pumpkin & simmer until sauce thickens, about 6-8 minutes. Season with salt & pepper then stir in kale & cook until kale wilts, about 2 minutes.
Use a wooden spoon to create four small wells in the mixture and crack an egg into each one. Cover pan & allow the eggs to steam about 5-8 minutes, or until whites have set or to desired doneness.
Add fresh cracked black pepper & garnish with fresh herbs, microgreens and serve with avocado as desired.
