There’s more to me than meets the eye. People constantly tell me how lucky I am not to have loose skin and stretch marks. Well guess what, I do. It’s not nearly as severe as many people's, but it’s still there. And it still haunts me. While losing the weight was one of the biggest things I’ve ever had to overcome in my life, I’m still left with a daily reminder of what once was. My lower body, especially my lower stomach and legs are the most affected. I still don’t ever feel comfortable in a bathing suit or naked.⁣

But aside from my loose skin, there’s more to me than meets the eye. I’m smart as hell, pride myself on high integrity and I’ve overcome some pretty extreme hurdles in my life to be where I am today. It’s taken years but I truly love myself, regardless if there are parts of myself Id still like to change or improve.⁣

Ingredients 🍱:⁣⁣
Made with tomato sauce, onions, jalapeño, taco spice, melted vegan mozzarella, avocado, and cilantro⁣⁣
Instructions:⁣⁣
sautéed some onion and jalapeño in olive oil and then added plain tomato sauce (diced tomatoes would work as well). I mixed in some taco seasoning and then mixed in mozzarella. Crack in the eggs, cover, and cook for 4-5 min until whites of eggs have set. Top with avocado slices, extra jalapeño if desired, and fresh cilantro.⁣

low carb/keto Chilaquiles, Migas whatever you want to call it.... so bomb.

I used @susaliamx tortillas. 4 net carb per tortilla.  See what I did below.

Directions:

I sprayed the tortilla with @chosenfoods avocado oil spray on both sides, and fried on low till crispy. If you do not care about calories just fry in avocado oil.

After in a separate pan I cooked up some beef chorizo from @vvsupremo . I drain and pat down with like 20 napkins. Just because we can eat fat, does not mean I want to eat excess fat, etc.

I then used a new pan 🤣 and added in 12 tortilla triangles. I am counting this as 6 net carbs
 I added two eggs, and started scrambling it on low heart. Once eggs were almost cooked I added one tbsp of beef chorizo. Then I added 3 tbsp of salsa. Finished cooking till tortillas looked dryer but still crunchy and plated.

P.s.
We definitely need to go to the grocery store because I have no queso fresco or cilantro 🤣🤣 It would of been so perfect that way. oh well. 🤷‍♀️ #changeyourlife

Love making crockpot meals on the weekend.... taking these two dudes pumpkin picking then carving and by 5pm we'll have perfectly tender fall off the bone ribs! Peace out ribs see ya in 8hrs.✌ I take the membrane off the ribs then I  use the dry rub from @bethlynnketo ... rub all over then place ribs in crockpot meat side out and smother in your favorite sugar free bbq sauce,  I use @ghughessugarfree ,cover and set low for 8 hours. Then I slap them on a hot grill to finish em off and get them all carmelized or you can pop em under the broiler.... delicious either way!❤ #ribs #crockpotribs #sugarfreeribs #fingerlicking .

Egg rolls have always been one of my favorite side dishes. I’ve been finding new ways to use cabbage lately and had the idea to make these steamed pork cabbage rolls. Instead of putting shredded cabbage inside, the cabbage makes a great roll filled with savory ingredients and a bit of spice from freshly grated ginger.⁠⁣⁠

- 🤤 Perfectly cooked salmon in your crockpot!! by delish 💁 ⏩ INGREDIENTS

1 -2 lb. skin-on salmon fillet
Kosher salt
Freshly ground black pepper
1 lemon, cut into rounds
1 1/2 c. low-sodium vegetable broth
Juice of 1/2 lemon
2 tbsp. freshly chopped dill, for garnish

DIRECTIONS *Line slow cooker with a large piece of parchment paper. Add a layer of lemon slices to the bottom of the slow cooker, then lay salmon on top.
*Season salmon generously with salt and pepper. Add broth and lemon juice to slow cooker. Liquid should come about halfway up your filet. Top salmon with more lemons and cook on low for 2 hours, or until opaque and flaky.

transformationtuesday If you’ve been following me for a long time, you may remember last summer when I was so ecstatic to buy a dress in an actual store for our friends’ wedding. I had already lost over 130 lbs at that point (so the left is NOT my highest). I’ve been eyeing this dress again recently knowing their anniversary was coming up and couldn’t wait to do a comparison. It’s just a bonus that there are exactly 100 lbs between these pics! I’m a bit bummed that the dress doesn’t look good on me anymore (and it would cost more to alter than I paid for it, with no special events coming). RIP boobs.

Not only have I had quite the transformation this year but my husband has as well. -- @matt_87038 has been my source of constant support throughout this last year (and the last 12) and he joined right in on my endeavor to a healthier lifestyle. We made the choice together that we wanted to set a better example for our boys and that included health as well. We went from being two bumps on a log to loving playing, running and enjoying activities with our three boys. As we love to tell our boys “team work makes the dream work” and he is certainly my partner in bettering ourselves. It’s also important to note that we both don’t do Keto. I do Keto and fasting and he fasts and eats within a 3-4 hour window and still indulges in his favorite foods every now and then:) we supported each other even bough we were using two different methods because one way doesn’t work for everyone. I see so much you must do this or you must do that and I’m here to say the only thing you must do is what works for you and the one thing you must NOT do is quit🖤 you got this everyone!!

📝INGREDIENTS⠀⁠
Taco Filling: 4 chicken tenders OR 1 skinless, boneless chicken breast cut into 4 strips 1/2 lb chopped bacon 2 cups chopped romaine lettuce 2 tbsp garlic powder⠀⁠
⠀⁠
Taco Shells: 2 cups shredded parmesan cheese⠀⁠
⠀⁠
Dressing 2 eggs yolks 3 cloves of garlic 2 tbsp Worcestershire sauce 1/4 cup shredded parmesan cheese 2 tbsp lemon juice 1 tbsp anchovy paste 2 tbsp dijon mustard 1/2 cup olive oil⠀⁠

📝Instructions⠀⁠
Filling Season the chicken strips (or sliced breast) with salt and pepper. Pan fry for 5 minutes each side. Set aside. Fry the bacon in a pot until crispy. Degrease the bacon, and combine with the garlic powder.⠀⁠

Taco Shell Add 1 cup of parmesan cheese to a medium-high heat frying pan. Spread the cheese making sure it covers the entire pan. Fry until the cheese starts to crisp and bubble. Take the cheese out and form in a taco holder.⠀⁠

Dressing Combine the eggs, garlic, Worcestershire, shredded parmesan, lemon juice, anchovy paste, dijon mustard and olive oil in a blender. Season with salt and pepper.⠀⁠

Assembly Coat the romaine with the caesar dressing. Add the lettuce to the hardened parmesan cheese shell. Top the lettuce with the garlic bacon bits, chicken and extra dressing.⁠

Philly Cheesesteak Skillet
Ingredients:
1 yellow or green bell pepper
1/2 small onion
1 cup sliced mushrooms
1 pound sirloin steak
Provolone Cheese Slices
Olive Oil
⠀
For Steak: Salt, Pepper, All Purpose Seasoning, Garlic Powder, Low Sodium Soy Sauce (optional) **INSTRUCTIONS**
1. Cut sirloin steak into thinly sliced strips
2. Season meat with salt, pepper, all purpose seasoning, garlic powder and a little soy sauce until all the meat is evenly coated. Let sit.
3. Cut onion and bell pepper into strips
4. In a large skillet over medium heat 1 tablespoon of olive oil Add onions and bell peppers, salt and pepper to taste and stir occasionally until tender and slightly browned. (3-5 mins) add mushrooms and continue to sauté (1-2 mins)
5. Remove veggies from pan
6. Add 1 tablespoon of olive oil to pan than add meat stirring occasionally until the meat is browned and crispy
7. When meat is done drain any excess liquid and add back in veggies. Continue to stir fry meat and veggies together an additional 2-3 mins.
8. Turning heat to low cover the meat and veggies with provolone slices
9. Cover and cook for 2-3 minutes, until the cheese is melted. Remove the lid and stir in the melted cheese. Enjoy!!

Ingredients⁠
2 lb cream cheese (1 kg / 4 cups)⁠
2 cups heavy whipping cream 450ml / 16 fl oz⁠
6 large eggs⁠
1 cup Erythritol (SoNourished)⁠
1 tsp Vanilla Extract⁠
1 tsp salt⁠
1 tsp butter (for greasing pan)⁠

Instructions⁠
1. Preheat your oven to 205C (400F)⁠
2. In a large mixing bowl, combine the cream cheese, cream and erythritol⁠
3. Mix in 1 egg at a time, until all 6 eggs are mixed into the mixture⁠
4. Mix in the vanilla extract and salt⁠
5. Using a 25cm (10") cake tin, grease with butter, and line with 2 large sheets of partchment paper so the sides are nice and high (to hold in a high rising cheesecake)⁠
6. Pour the mixture into the tin, and cook for 60 minutes, until the top is dark brown and jiggly (watch video for reference)⁠
7. Let it cool to room temperature, then place it in the fridge to set for 4 hours. It will compress, so don't worry⁠
8. Slice into 15 slices, and serve with coffee or tea. Keep in an airtight container in the fridge for up to 4 days, can be frozen for up to 2 weeks.⁠ .
