Whether you like it or not, it is officially autumn here in the northern hemisphere. While summer is my favorite season, and I am sad to see it go, I do love eating the fresh seasonal foods that are brought into rotation with the changing of the seasons. ⠀

Butternut squash is one of my go-to fall favorites. It's hearty, satisfying, can be added to a dish for extra flavor and nutrition... or be turned into a meal on its own. ⠀
▫️⠀
Butternut squash packs quite the nutritional punch. It is an EXCELLENT source of Vitamin A. (Seriously, it contains 457% of your RDI.) It is also a great source of C, E, and a variety of B vitamins as well.⠀
▫️⠀
Butternut squash also contains many necessary minerals such as magnesium, potassium, and manganese. ⠀
▫️⠀
Its high nutritional content has linked its consumption with a decrease in the risk of disease. Consuming butternut squash is linked with a decrease in the risk of certain cancers, heart disease, and the prevention of mental decline associated with aging. ⠀
▫️⠀
All that and it's super low in calories! One cup contains only 82 of them. That, combined with its high fiber content, can be helpful for losing weight. ⠀

So you can eat ALL the salad and nutritious and delicious foods but if you aren’t absorbing the goodness what is the point?⠀

Some tips for better absorption, slowing down your eating, chewing more and adding a Digestive Enzyme with your meal. Did you know, as you grow older you produce less? My fav is doTERRA’s Terrazyme! Has been a game changer in my diet (especially when eating complex vegan foods with beans etc if you know what I mean;) ).⠀

There is POSITIVE & NEGATIVE that we can absorb as well. ⠀

And the opposite can happen as well.  When you surround yourself with negativity, unfortunately those negative vibes can find their way in to your soul and affect you too.⠀

So what can you do to protect yourself from negativity? Ground yourself, take a walk in nature, take deep breaths, visualize that the negativity is just brushing off of you, ignore it, literally let it go in one ear and out the other and don’t feed into it with any effort.⠀

Vegan Pumpkin Donuts 😋 Tag a friend who'd love this! ❤️ ⠀

1 cup of all purpose flour (can also use pastry flour or something similar), I have not tried these with a gluten free flour except a 1-1 flour substitute ⠀
1/2 teaspoon of baking soda⠀
1 teaspoon of baking powder⠀
pinch of salt⠀
1/2 teaspoon of pumpkin pie spice⠀
¼ cup of maple syrup⠀
½ cup of almond milk⠀
1 teaspoon of vanilla extract⠀
½ cup of pumpkin puree⠀
1 cup powdered sugar⠀
2 tablespoons milk of choice⠀
½ teaspoon of pumpkin pie spice or cinnamon⠀
⠀
Pre-heat oven to 350 degrees F. Grease a 6 cavity donut pan.⠀
In a large bowl, sift together the flour, baking soda, baking powder, salt, and pumpkin pie spice.⠀
Stir in the milk, maple syrup, vanilla extract, and pumpkin puree. Stir until well combined.⠀
Evenly divide the batter into the donut pan. You can spoon it in and shake the pan a bit to level it out OR you can pour the batter into a baggie, cut one corner, and then pipe the batter into the donut pan.⠀
Bake for 9-12 minutes or until a toothpick inserted in the donuts comes out clean. Mine took right at 10 minutes.⠀
While the donuts cool, make the icing by whisking together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of the pumpkin pie spice. Add additional milk, 1 tablespoon at a time, until you reach your desired icing thickness.⠀
Once donuts have cooled a bit, dip them into the icing ⠀

Sometimes all you need is a perspective change 🤸🏻‍♀️ It’s really incredible to me to think about how even though we all exist on the same planet, we all see and experience completely differently. It really all comes down to what your perspective is. 
Small changes in perspective can really transform the way you experience life. I have done a ton of work on myself reprogramming my subconscious to shift my perspective which has dramatically changed my experience. I choose to see and honor my inner power and act through the love in my heart rather than hide from my strength and act out of fear. It took a lot of small steps to make it where I am today, but I am so grateful to my past self for have the courage to begin transforming my perspective ❤️ 📸: @righteoushombre
