🇳🇱SNEEK-PEAK van mijn boek & leven achter de schermen!

Ik heb er lang over nagedacht of ik dit wel moest delen. Hoewel ik het erg moeilijk vind heb ik uiteindelijk besloten om het wel te doen.
.
Het is vandaag precies 1 jaar geleden dat ik werd getroffen door een hartinfarct. De tijd die volgde was buitengewoon emotioneel. Ik heb mezelf altijd gezien als een sterke, krachtige vrouw die de wereld aankon. Nu was ik ineens hartpatiënt. Mijn wereld stond op z’n kop en ik voelde mij verraden door mijn eigen lichaam.
.
Na de aanvankelijke shock voelde ik mij dankbaar voor alle mijn zegeningen en realiseerde ik me hoe graag ik mijn levenswerk, passie, kennis & liefde voor Indiaas eten met mijn kinderen en anderen wil delen.
.
Nu 1 jaar later zit ik nog steeds niet helemaal lekker in mijn vel, maar een hartinfarct krijgt mij niet klein. Ik ben nog altijd ambitieus, heb nog volop plannen voor de toekomst & een oneindige lijst met recepten die ik nog wil uitproberen.
.
Het mooie is dat het ook een nieuw project heeft opgeleverd waar ik enorm trots op ben. Het boek schrijf ik recht uit mijn hart en ik hoop jullie er mee te inspireren om zelf de lekkerste Indiase gerechten op tafel te zetten.

For a long time I have thought about whether I should share this with you. Although I find it extremely difficult to expose myself I eventually decided to do so.
.
Today it’s been exactly a year since I had a heart attack. It was followed by a period full of emotions. I’ve always considered myself a strong, powerful woman who can handle everything, but now my world had been turned upside down by heart disease and I felt betrayed by my body.
.
After the initial shock I felt thankful for all the blessings in my life. I realised how much I want to share my life’s work, my passion, knowledge and love for Indian food, with my children and with others.
.
One year later I haven’t fully recovered yet, but I won’t let a heart attack break me. It made me stronger, wiser & humble. It made me work on a beautiful new project. I put my heart and soul into this book and I hope my recipes will inspire you to cook tasty Indian food. ❤️

MUSHROOM KHEEMA'D!! Kheema stands for mince or ground meat, traditionally flavoured with whole and powdered spices. Simmered long enough, they have that melt-in-the-mouth feel! Most vegetarian versions use soy granules, while it has great texture, it lacks a distinct flavour of it's own. Enter, the delicious mushroom🍄, bursting with umami and known to be vitamin D powerhouses. Here is a version of our Kheema, meat and soy-free, made with finely chopped chestnut mushrooms and green peas, flavoured to make your tongue tingle! On the thali are mushroom kheema, Rice and lentil Khichdi and green olive pickle! MUSHROOM KHEEMA'D

Cooking time: 25 mins

Servings: 3 - 4

Ingredients:

Mushrooms: 250g

Onion: 1 medium

Tomatoes: 2 medium

Green peas: 1/3 cup

Green chilli: 1 tsp

Ginger: 1 tsp 
Garlic: 1 tsp 
Bay leaf: 1 piece

Cinammon: 1 piece

Cardamom: 2 pieces

Cloves: 3 pieces

Red chilli powder/paprika: 1 tsp

Turmeric powder: 1/2 tsp

Coriander powder: 1 1/2 tsp

Cumin powder: 1 tsp

Garam masala: 1 tsp

Lemon juice: 2 tsp

Fresh coriander: 1 sprig 
Method:

1. Wash and mince the mushrooms into small pieces. Either pulse them in a food processor until fine or chop using a sharp knife and set aside

2. Heat oil in a pan, add the bay leaves, cinnamon, cardamom and cloves and allow to infuse

3. Add finely chopped ginger, garlic and green chilli and sauté 
4. Add chopped onions and sauté until light brown

5. Add the red chilli, turmeric, cumin and coriander powder and sauté for 2-3 mins on low heat

6. Add the chopped tomatoes and a dash of salt, fry them until they loose their water

7. Add the chopped mushrooms and peas and simmer until the mushrooms are cooked

8. Adjust consistency, do not add any additional water if you want it dry

9. Add the garam masala, salt, lemon juice and coriander leaves and mix well

10. Serve with warm rice, chapatis or on toast!

What is your favourite way to eat Spinach? I like to make a whole wheat spinach flatbread (roti/paratha). Super quick, efficient, and delicious. It can be served with hummus, as in the picture, margarine, any nut or seed butter, etc.

Karatha Patrado | Bitter Gourd Hot & Sweet Curry.😋

🔹️ Karate Patrado
🔹️ Rice
🔹️Gulab Jamoons
🔹️ Curd topped with roasted jeera powder 
For those interested here's the recipe 🔹️Wash and cut the bitter Gourd in roundels. Deseed them and add salt. Let it sit for a while.
🔹️Soak 10 to 15 red chillies in hot water and keep aside. Drain and grind it. In the chilli paste add tamarind pulp, jaggery, chopped Onions, salt and mix well.
🔹️Fill the bitter Gourd with the above mixture.
🔹️In a pan add oil and methi seeds (wait till they change color a bit and are fragrant), splutter mustard seeds and add the bitter Gourd in a neat manner. Add enough water for it to cook. Once done, turn the bitter gourd and roast it on open & medium flame till the remaining water evaporates. 
Best served with a plate of hot rice 🍚

Raddish Carrot stir fry 
Got my hands kn purple raddish for the first time in this week's farmer's market. As its the season of all delish root vegetables.  Here i have a simple stir fry of purple raddish, carrots and greens from spring onion. 
You can season is as per your likings, i cooked it in cumin and mustard seeds tempered oil. Added corriander, tumeric, red chili and black pepper.

Its a perfect side dish, had this with comforting green mung khichdi. Yum yum yum 😋

Our Pakora Mix includes the requisite besan/chickpea flour; ajwain seeds, which provide an elusive flavor reminiscent of but distinct from thyme; rice flour to add some crunch; a smidge of baking powder to lighten the texture; and no less than 18 ground spices including turmeric, star anise, fennel, mace, and black cumin seeds.
