Protein-packed choco chip cookie PANCAKE CAKE! 🍪🥞This idea was definitely conjured up by the little kid in me; the kiddie 👶🏼 who was obsessed with cookies and pancakes (and anything studded with warm chocolate chips really 🤣), and couldn’t wait to be a ‘grown up’ because it surely meant getting to eat dessert for breakfast, right?!

Well, I think I would’ve done Little Meg proud with this cookie cake creation! 🍪🍰And I doubt she’d notice the totally healthy ingredients that I managed to sneak into the mix...

-> Chickpea (gram) flour for a gluten free pancake stack that is rich in protein
-> Plenty of dollops of coconut 🥥 whipped creamy!!
-> Homemade peanut butter and date #rawnola (which basically tastes like raw cookie dough, sans the threat of salmonella)
✧ 
And, because no cookie cake is complete without some real cookies, I layered some @jonjonfoods crunchy gf choc chip cookies between the yummy mess of everything else!

Nadat het compleet misging met de eerste taart issie nu eindelijk gelukt 🎉 en niet heel onbelangrijk... hij is echt ONWIJS LEKKER! Wil je deze taart ook als ontbijt en ven je benieuwd hoe je m maakt? LADIES, listen up 👂. There are NO “good” foods and no “bad” foods🚫. Food does not have a moral value and we shouldn’t give it one☝️. I was chatting with a lady and she said she just wants to be able to go out and order a salad🥗or a cheeseburger🍔without thinking twice about it. The problem right now is, she DOES think twice about it😩. Food has become an obsession for her, has made eating not fun, and she feels anxiety on dates with her husband when she doesn’t know what the food situation will be like💔. This makes her feel frustrated, because she wants to badly to be fully present in everyday life with her hubby and kids, but knows her obsessive relationship with food is holding her back from that. ⠀

I cant remember the last time I ate an actual sandwich because toast is just 🔟x better!Mostly because you can decorate it really nice.

Så fik jeg lavet æggemuffins, som er lavet med spinat og kalkunbacon, for jeg elsker virkelig den kombination. Men de kan selvfølgelig også laves med andre slags grønsager 😊 Så fik jeg en kæmpe gul squash igår af søde @ma149 , som jeg lavede pizzafyldte squashf 😊 det var faktisk "bare" pizzafyld, som blev fyldt i squashen drysset med ost og så i ovnen 😍 dejligt med "skjulte" grønsager og så smagte det faktisk lidt ligesom pizza 😍 og så sparer man en del kcal 😁😁

👉🏼VS our DIY PSL of the same size = Only 178 calories, 3 grams of fat and 15 grams of carbohydrates with 13 grams of sugar.

🧡Healthy DIY Pumpkin Spice Latte Recipe:
- 2 ounces espresso (or 4-6 ounces strong coffee)
- 2 tablespoons pumpkin puree (NOT pumpkin pie filling)
- 1/4 teaspoon pumpkin pie spice
- 1/8 teaspoon vanilla extract
- 1 tablespoon real maple syrup
- 1 cup non- or low-fat milk (or non-dairy milk)
⠀⠀
1️⃣Blend coffee, pumpkin, spice, vanilla extract and maple syrup until smooth.
2️⃣Froth the milk. If you don't have a milk frother, warm it in the microwave and blend until frothed.
3️⃣Pour pumpkin coffee mixture into a serving mug. Top with milk, reserving foam with a spoon. Add the foam on top and dust with a sprinkle of pumpkin pie spice.

Dinner last night was Sushi-ish bowls and they were the best thing I’ve eaten in a long time. When your Brussels sprout hating, vegetarian daughter is under the weather you take advantage! 😇
I made some sushi rice in my Instant Pot, made perfect crispy roasted Brussels sprouts (more on this later) and cooked up some thinly sliced strip steak. We ate it in bowls with spicy Sriracha mayo & sesame seeds on top. So good. 🤤 .

Dinner last night was Sushi-ish bowls and they were the best thing I’ve eaten in a long time. When your Brussels sprout hating, vegetarian daughter is under the weather you take advantage! 😇 I made some sushi rice in my Instant Pot, made perfect crispy roasted Brussels sprouts (more on this later) and cooked up some thinly sliced strip steak. We ate it in bowls with spicy Sriracha mayo & sesame seeds on top. Rawnola is a great breakfast or lunch for on the go and very easy + quick to make. All you have to do is throw teff flakes (or another approved grain) into the food processor together with banana, dates, coconut shreds and walnuts and pulse until everything is well combined. Top with fruits of your liking. You can store this in an airtight container for up to one week, which makes it a good meal to grab throughout your school/work week. Also great for children.
