Low Fodmap Peanut butter energy balls

Ingredients 
1 cup (80g) rolled oats

1/2 cup (90g) dried cranberries

1 cup (80g) peanut butter

3 tbs. (60g) maple syrup

1/2 cup (15g) puffed quinoa

2 tbs. (30g) mini dark chocolate chips

Method:

Place oats into a food processor and process until they are flour like in consistency

Add cranberries, peanut butter and maple syrup to food processor and continue to process until a dough begins to form and stick together.

Add puffed quinoa and chocolate chips and pulse several times until well distributed through the dough.

Using a large spoon, scoop out a spoonful of dough and roll between your hands into neat ball shapes. Place balls in an airtight container and store in the fridge.

Tip: for a nut free alternative, blend 64g of sunflower seeds into a paste and use in place of peanut butter.

HOMEMADE BREAD |

Making my own bread is one of my tastiest low waste swaps. We used to go through about one loaf a week (sometimes two -- one gluten free for me and one wheat for my partner), so that's a potential savings of at least 52 plastic bags a year. It's not enough to save the planet, but at least it's something. (Plus it's cheaper and tastier!)

Since I don't generally have the time or energy to make bread the traditional way, I thrifted a bread machine to speed up and simplify the process for me. Instead of toiling away, I just have to add ingredients and start the machine. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

As a bonus, it also gives me control over what ingredients I use. I can make full-on wheaty breads, or I can tone down the amount of wheat in it to make it more #lowfodmap for my sensitive stomach. In this loaf, I swapped about 1/3 cup of the wheat flour for rice flour. I'm slowly working up to see how much I can swap without affecting the quality of the bread. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

For a long time, I thought I was gluten intolerant. And don't get me wrong, wheat does affect me, but I've come to realize it's much more because of the carbs (fructans specifically) than the protein (gluten). So making my own bread with a mix of wheat and rice flours means that maybe I can have two slices (win!) instead of just one.

Broccoli used to make me so bloated that I went to the ER 3 times not realizing I was suffering from food allergies.

PUMPKIN PASTA?! Still in my pumpkin craziness over here. Not only delicious, but super easy to make. Add a protein and side veggie and meal is done.

Recipe:
▪️in a blender, pour 1 tsp @fodyfoods garlic infused EVOO, 1/2 tbsp butter (melted), 1 can pumpkin purée, 1 can coconut milk, 1 tsp salt, 1/2 tsp pepper, 1/8 tsp nutmeg, 1/4 tsp cinnamon & blend until smooth
▪️pour into skillet and heat over medium heat until slightly boiling. Cook until desired thickness of sauce.
▪️add 1/4-1/2c shredded Parmesan and stir until melted (or another white cheese)
▪️add in cooked and drained pasta (1 pound) stir until well coated

I am in the middle of an IBS flare up/attack. I haven’t experienced one this bad in a while. It started (I think) Monday. I knew the signs, bloating/distended stomach, uncomfortable, cramping, sharp stabbing pains. I didn’t think too much of it Monday, I just thought I ate something that wasn’t agreeing with me and I would feel better the next day. But, on Tuesday I was feeling much worse and then I knew this wasn’t going away easily or quickly. I felt really bad, but decided to stay at work and just tried to focus on my work (instead of stressing about my stomach, which would have just made my stomach worse). I was having much worse sharp stabbing pains and cramps, I just wanted to curl up in the fetal position. I luckily have a prescription from my gastroenterologist that help alleviate stomach pains/cramping/spasms called hyoscyamine sulfate, so I took some at work on Tuesday (and today), and it has helped a bit. I’m still trying to figure out what caused this attack/flare up. Maybe my lunch? Dinner from the night before? Stress? I don’t know. All I know is, I can only take things one day at a time right now. I am just trying my best to get through each day, doing my best to meet my body where it’s at. Doing my best to listen to my body. Doing my best to not let it stress me out. Doing my best to keep up my everyday responsibilities. Doing my best, one day at a time. .

I can’t believe it’s Wednesday already! Where is this week going?! Although as terrible as it sounds, I’m happy time is moving quickly, because I’m eagerly counting down the days until I can start introducing more foods into my diet! My body is really craving some form of stodge and the cold weather isn’t helping 🥶⁣

I’ve been very busy and on the go this week, so i’ve had to opt for quick and easy meals.⁣
⁣
I’ve discovered I can eat tinned salmon and tuna in spring water, so these have added interest to my salads and evening meals.⁣
⁣
Tonight I’ve made a grilled salmon and spinach frittata and I am thrilled with the outcome!⁣
⁣
Ingredients:⁣
* 10 organic eggs 🥚 ⁣
* 1 large can of salmon (in spring water)⁣
* 12 fresh spinach leaves ⁣
* 1/2 teaspoon of dried thyme ⁣
* Handful of fresh basil leaves 🌿 ⁣
* Salt & pepper to taste⁣
* 1 Tbsp olive oil ⁣
* Cherry tomatoes 🍅 ⁣
* Red & yellow peppers⁣
⁣
Directions:⁣
* Preheat oven to 170° ⁣
* Chop the peppers and pre-fry until they start to soften.⁣
* Mix together the eggs, fried peppers, salmon, thyme, salt and pepper.⁣
* Pour into a skillet frying pan, or something similar (steer clear of paella pans!! 🥘 I learnt the hard way and destroyed mine in the making of this frittata!)⁣
* Distribute the spinach, basil leaves and cherry tomatoes.⁣
* Bake for 18-20 mins or until the middle of the frittata is completely cooked through.⁣

The beauty in this frittata is that there are enough servings to feed me for breakfast over the next two days (which means I get an extra 15 mins in bed!! 🛌 💤 )⁣

I can’t believe it’s Wednesday already! Where is this week going?! Although as terrible as it sounds, I’m happy time is moving quickly, because I’m eagerly counting down the days until I can start introducing more foods into my diet! My body is really craving some form of stodge and the cold weather isn’t helping 🥶⁣ ⁣ I’ve been very busy and on the go this week, so i’ve had to opt for quick and easy meals.⁣ ⁣ I’ve discovered I can eat tinned salmon and tuna in spring water, so these have added interest to my salads and evening meals.⁣ ⁣ Tonight I’ve made a grilled salmon and spinach frittata and I am thrilled with the outcome!⁣ ⁣ Ingredients:⁣ * 10 organic eggs 🥚 ⁣ * 1 large can of salmon (in spring water)⁣ * 12 fresh spinach leaves ⁣ * 1/2 teaspoon of dried thyme ⁣ * Handful of fresh basil leaves 🌿 ⁣ * Salt & pepper to taste⁣ * 1 Tbsp olive oil ⁣ * Cherry tomatoes 🍅 ⁣ * Red & yellow peppers⁣ ⁣ Directions:⁣ * Preheat oven to 170° ⁣ * Chop the peppers and pre-fry until they start to soften.⁣ * Mix together the eggs, fried peppers, salmon, thyme, salt and pepper.⁣ * Pour into a skillet frying pan, or something similar (steer clear of paella pans!! 🥘 I learnt the hard way and destroyed mine in the making of this frittata!)⁣ * Distribute the spinach, basil leaves and cherry tomatoes.⁣ * Bake for 18-20 mins or until the middle of the frittata is completely cooked through.⁣ ⁣ The beauty in this frittata is that there are enough servings to feed me for breakfast over the next two days (which means I get an extra 15 mins in bed!! 🛌 💤 )⁣ ⁣ #sibo #ibs #talesofatummy #fodmap #bloating #digestivehealth #fodmapfree #fodmapfriendly #lowfodmap #ibsdiet #irritablebowelsyndrome #bloated #bloat #digestivesupport #foodintolerance #guthealth #lowfodmapliving #ibstips #guthealthtips #guthealthrecipes #guthealthmatters #selfhealer #guthealing - 4 hours ago

Day 23. Your best memories related to your illness?
First time I worked out in over a year. I went to a physiotherapist that really listened to me and researched fibromyalgia just to be able to help me. She saw how bad I wanted to be active and do things and after going to her for a while I realized that it was possible. I remember being sooo incredibly happy. We had really fun together. She was not used to someone actually wanting to work out and wanting to do one rep more and she had to stop me and tell me to rest longer all the time hahhah 😅

^1 tomaat
^1 eetlepel gesneden bieslook
^handje bosuitjes (groene deel)
^peper en zout ^1 eetlepel mayonaise
^1 theelepel paprikapoeder
Net gemaakt dus afgedekt in de koelkast en morgen heerlijk smullen zodra alles lekker is ingetrokken. 😋
