What's your best day as a mom? It can be everyday! But seriously, one of my best days as a mom is when she's not cranky. It can drive me nuts tbh! One of the things that make her cranky is because she's bored at home so I always make it a point to take her somewhere she can explore and have fun! That makes her happy, which makes me happy too! My other goal is to make her tired so she can have a good nap and I can have a 2hr quiet time 😉🤷‍♀️ yup, story of my life!

I bow down to those of you who crank it out on your IG stories and feed. I will be the first to admit, my consistency could use A LOT of work. .

I haven’t posted a #kidswhocook post in several weeks, but know that I’m cooking and baking with my boys every week. I’m going to post some pics of the meals I’ve remembered to photograph in my stories. .

There have been time when we’re halfway through dinner that I realize that I forgot to take a pic (oh, the humanity). Somehow we have managed to continue on with life. 😜 .

The other night we had chicken enchiladas (pre made from Costco). I cut up the boys food before they eat and when Evan sat down he says, “What is this? It looks like someone threw up.” Now, Jeremy and I had to turn our heads because we were laughing so hard. The kid is incredibly observant and yes, the cut up enchiladas did look like something regurgitated. .

On a positive note, they were very tasty. I explained to the boys that you should not judge a book by its cover. They both ate very well. .

None of this has to do with the posted photo. 🤣 Tonight, Logan and I made super easy, family friendly, chicken Parmesan over angel hair pasta. .

We used pre made, organic breaded chicken tenders, cooked them halfway through, flipped them, covered them in spaghetti sauce and mozzarella, then finished baking them. You can add Parmesan on top before eating. We served it over angel hair pasta and I had a table of happy eaters. .

This isn’t my recipe, but I’ll share it with you anyway because it’s DE-LICIOUS!⠀and I did add some spice to mine at the end.
🥧🥧🥧🥧⠀ Servings 6 servings, about 1 cup each, 285 calories.⠀ 🥧🥧🥧🥧⠀
🔹6 tsp. olive oil, divided use⠀
🔹1 medium onion, chopped⠀
🔹2 medium carrots, chopped⠀
🔹2 cups sliced mushrooms (approx. 4 oz.)⠀
🔹2 Tbsp. whole-wheat flour⠀
🔹1½ cups reduced fat (2%) milk⠀
🔹1 cup low-sodium organic chicken broth⠀
🔹½ tsp. sea salt or Himalayan salt⠀
🔹½ tsp. ground black pepper⠀
🔹1 tsp. fresh thyme, finely chopped⠀
🔹¾ cup frozen green peas⠀
🔹¾ cup cubed cooked sweet potatoes⠀
🔹2¼ cups cubed cooked chicken breast (or light/dark turkey meat, no skin) note: would definitely use rotisserie chicken or leftovers to get more flavor 🔹6 sheets phyllo dough (each approx. 12 x 17-inches), thawed, covered in a slightly damp towel.⠀

Looking for an easy weeknight meal?  Try this One Pan Fish and Veggies recipe!⁣

Ingredients:⁣
1 pound fresh haddock or other white fish (we tend to use 1.3 pounds each time)⁣
2 golden beets⁣
6 rainbow carrots⁣
3-5 potatoes⁣
3/4 cup Panko bread crumbs⁣
3 Tablespoons olive oil⁣
sea salt and pepper, to taste⁣

Directions:⁣
🍽Coat the fish in one tablespoon of the oil, lemon juice, sea salt and pepper.  Cover and chill for about an hour.⁣

🍽Scrub, wash, peel and chop all of your vegetables into similar sized pieces.⁣

🍽Heat the oven to 425 degrees then cook the vegetables in the remaining olive oil until tender, and just starting to crisp a bit. Then reduce the heat to 400 degrees and slide the vegetables to the two ends to make room for the fish in the middle.⁣

🍽Sprinkle the Panko and a dash of salt and pepper onto the fish. Cook an additional 15 minutes or until the fish is completely white and has started to flake apart a bit.⁣

This recipe was highly requested when I posted the picture of it last week!  It was so good, easy, fairly quick and my family said "It's a keeper!" Here's what you'll need:

Cauli-Rice *(You can "rice" it in a food processor, but I buy mine already made at Costco, much easier!)
Cream Cheese, softened 
Mozzarella Cheese
Provolone Cheese
Ground Beef
Sausage 
Pepperoni
Mushroom 
Bell Pepper 
Red Onion
Marinara Sauce

Set your oven to 400*F. 
Since I get the frozen Cauli-Rice from Costco, I bake it first to dry it out.  It holds a lot of moisture and this helps keep it from getting soupy.  So, it goes in the oven while I'm cooking the ground beef and sausage. 
Once you've got the Cauli-Rice in the oven, then get your raw meats cooking.  I add some salt, pepper, garlic and Italian herbs or my Young Living Vitality oils like Basil and Oregano to my meat.  SO good!

I chop up my veggies-- the mushrooms, onion and bell peppers and put them to the side. 
Once my Cauli-Rice is done, I add about 1/2 jar of sauce to it and the softened cream cheese and mix thoroughly, then spread evenly across the bottom of my baking dish. 
Then I layer on my cooked ground beef and sausage, then veggies, more sauce and then pepperonis and then my Mozzarella and Provolone. 
Bake until cheese is melted and a little brown on top! 
It's so good!  I hope you like it!

After a lot of hard work, I finally tidied most of the boxes and bags from moving, out of our living room (singlehandedly 😏).
