I just realized one of my favorite autumn patio dinners would be the perfect accompaniment to turkey and mashed potatoes - making it a fabulous Thanksgiving side dish!
It's a multi-layered blend of flavors with sweet autumn pears, figs and delicata squash grilled alongside bitter radicchio and broccoli rabe then laid atop a bed of sturdy greens. Salty grilled halloumi and oil-cured olives join the party before being drizzled with a zippy herbaceous dressing.
AND you can cook it all on the grill, freeing up your already over crowded Thanksgiving oven!
~The addition of halloumi elevates this to a main course but feel free to leave it out if you're making this as a side, or to make it vegan.
Serves 2 as a generous main course or 4 - 6 as a side.
A few handfuls of a mix of sturdy greens, like baby mustard, frisee, mache, kale and spinach.
1 delicata squash, halved, seeds removed and sliced into half moons
1 bunch broccoli rabe or broccalini, dry ends removed
1 head radicchio, quartered
1 red pear, cored and sliced
6 figs, halved
4 oz halloumi ~ if using
Small handful of oil-cured olives
High heat oil for grilling, such as avocado or grapeseed.
~Make the Fresh Herb Dressing first - recipe in comments.
~Scatter the greens over a platter and drizzle with a little of the dressing. Set aside.
~Coat the squash, broccoli rabe, radicchio, pear and figs in a very light coat of oil and grill over a low flame until each is lightly cooked and has grill marks. If you prefer, use an outdoor grill pan to keep them from slipping through the grate. The figs and pear slices will only need a minute or so to cook, the radicchio and broccoli rabe about 3 - 4 minutes per side but the squash should be cooked on a grill pan for about 8 - 10 minutes per side to ensure they're fully cooked. They should be easily pierced with a fork when done. Alternatively you can roast them in a 425° oven for 20 - 25 minutes.
~Slice the halloumi into 1/2 inch slabs, coat with oil and grill for about 2 - 3 minutes per side, until grill marks appear and it's warm and soft.
~Scatter the grilled veggies, fruit, halloumi and olives over the greens, drizzle with dressing.
