This brunch from Cafe N in Copenhagen was amazing. After Ice skating I wanted something healthy but filling to tuck into and this was it. The also offer cakes and hot chocolate with vegan whipped cream. Yum ! Worth a visit for sure !

why does this mac & cheese look a little different?

sometimes is fun to switch up your normal food to try a different version!

Sometimes the best doesn't have to be complicated. Take this salad for instance... It's basically a bowl of spinach, sliced apples, and some roughly chopped almonds. But then the magic happens and this bowl of ingredients becomes a flavor packed dish all because of the Sumac Vinaigrette.

Getting fruits and veggies into children can be hard. ⠀⠀
Due to lots of factors, busy parents,  fussy eaters, current family food cultures, and also due to a lack of knowledge, less than 2.5% of Australian children get the recommended servings of fruits and veggies! 😳 ⠀⠀

Want something quick and easy to throw in the crockpot that's always a winner?? I've been making many variations of this type of recipe for a few years now, but today's meal turned out theeee best it has in awhile! In your crockpot put 3 chicken breasts, about 1 to 2 cups of low sodium chicken broth, 1 chopped bell pepper, about a 1/4 of a red onion, 1 - 15oz can no salt added black beans, 2- 15oz cans no salt added tomatoes, 1 small bag frozen corn, 1/2 block of cream cheese and about 3 tablespoons of @thegourmetrd homemade taco seasoning. Turn on low for 6  hours. Once ready to serve, shred the chicken. Top with your favorite taco 🌮 toppings, serve over brown rice, quinoa or with tortilla chips. Nothing like "fast food" on busy nights! 🥑🍅

And for our weekly produce..! I feel like we kindddd of get the same things every week, but I’ve got it sort of figured out by now how much we actually consume, so we don’t waste hardly any produce. Yay to not wasting food! This week we got an iceberg lettuce, a bunch of kale, 2 broccoli crowns, 2 cucumbers, a bag of green beans, lemons, yellow onion, nectarines, peaches, plums, tomatoes, and sugar snap peas. This is a “medium” sized box, which has worked great for our family of 3. We try to cook dinner 4-5 nights a week around what we have on hand, plus I pack the kiddo’s lunch usually 4-5 days a week. We eat a lot of fresh fruit as snacks and with breakfast. By the end of the week we are usually through most of our box, and I can always adjust the next week’s box if I know there is something we do or don’t need. Only 5 ingredients to “Fresh and Simple Guacamole.” It’s so simple and yet I always get compliments and people asking for the recipe. I think because it is so simple you can taste each ingredient and there is no funky preservative flavor like in many ready-made store bought versions.

While eating low carb... a lot of folks make the mistake of eliminating good fruits and veggies that are full of good nutrients that their body needs... because they are fearful of the carbs! BUT- what they are missing is that there are a lot of veggies and fruits that are full of FIBER... fiber is a type of carb that isn’t digested and absorbed like other carbs. SO, learning what fruits and veggies you can include in a low carb diet is important!

Raspberries are a great option! About half of a raspberry’s carb count is fiber! In one cup of raspberries you will only have 7g of net carbs. (Net carbs are your total carbs minus fiber.) And not only dietary fiber...you will also find that they are a good source vitamin C and manganese.
