Hi, My name is Rachel and I help run the Kalamunda Community Garden in the Perth Hills, Western Australia. Last weekend we ran a 'Crowdsaucing' event of our own as we were so inspired by your efforts in Melbourne. Over the Summer we harvested around 15 kilos of tomatoes, we supplemented this with a crate of tomatoes from our Farmers Market.
We hired a tomato crusher for the morning. We were advised to keep the skins/seeds from the tomatoes, dehydrate them and then food process them to make a tomato powder for stews or cooking through the winter when tomatoes are not available. This worked a charm as now we have multiple jars of powder that might have otherwise gone to waste!
Thought you might like to share this with your participants as another great way to utilise every part of the tomato!
