Breading was made by mixing flour, lemon pepper, garlic, paprika & peppercorn pepper 👌 I had the heat at Medium High (oil needs to be at 350 degrees) and fried my tenders for about 4-5 mins then flipped for another 2-3 mins of frying🔥

Stuffed Chicken Rolls – Phase 2

Ingredients: 
100 grams chicken breast 
Spinach 
1/2 cup chicken broth or water 
1 tablespoon chopped onion 
1 clove of garlic crushed and minced 
1 tablespoon lemon juice 
Dash of onion powder 
Dash of garlic powder 
Pinch of cayenne pepper 
Salt and pepper to taste 
Directions: Tenderize chicken manually by pounding until flat. Cook spinach lightly with garlic, onion and spices. Strain out excess liquid from the spinach and place mound of spinach in the center of the pounded chicken. Roll up the spinach mixture inside the chicken breast. Place rolls in baking dish and add chicken broth to the pan. Bake the rolls in 350 degree oven for about 15 minutes or until chicken is cooked completely. Variations: Top with marinara sauce recipe. Makes 1 serving (1 protein, 1 vegetable) Phase 3 modifications: Brush chicken with olive oil, add marinara sauce, and top with mozzarella cheese if desired. Bake until brown and bubbly. Another modification is to mix the spinach mixture with sliced mushrooms

Sometimes I like to experiment last night was one of those times! Have you ever had a chicken pot pie with a biscuit on top? Well it’s delicious FYI! I used @whollywholesome gluten free pie crust baked at 400 for ten minutes. I let it cool for a minute and then pressed the crust into the bottom of my casserole dish. Fill with favorite chicken pot recipe and I topped with gluten free @bisquick. I used a flax egg, almond milk, and butter substitute so this was/is gluten, dairy, egg, corn, and soy free! I also added bone broth, turmeric, fresh garlic and other herbs for extra goodness! #healthynevertastedsogood #comfortfood #healthycomfortfood

Messing with the spices and inspired by a delicious dish I tried from the amazing @joerycastel I cooked Sa-Thai chicken (see what I did there?) I used two baskets of deboned chicken thighs (just over a kilo). On a bowl I mixed three tablespoons of satay paste and one of green Thai curry, one tablespoon of ketjap mais, one tablespoon of rice wine and a good pinch of salt and pepper. Mixed it all up and then laid the open thighs and rubbed them with the mix, building layers and making sure that the mix went everywhere. I then put them in the fridge for a few hours and pan seared them in a hot pan for a couple of minutes each side and finished in a low heat oven while getting the rice ready (about 10 minutes). The time in the oven just finished the chicken and produced a lovely jus that was used to flavour the rice on the plates. Really nice and you can use the chicken in different ways if you want, noodles, some nice greens or even as a wrap. Messing with the spices and inspired by a delicious dish I tried from the amazing @joerycastel I cooked Sa-Thai chicken (see what I did there?) I used two baskets of deboned chicken thighs (just over a kilo). On a bowl I mixed three tablespoons of satay paste and one of green Thai curry, one tablespoon of ketjap mais, one tablespoon of rice wine and a good pinch of salt and pepper. Mixed it all up and then laid the open thighs and rubbed them with the mix, building layers and making sure that the mix went everywhere. I then put them in the fridge for a few hours and pan seared them in a hot pan for a couple of minutes each side and finished in a low heat oven while getting the rice ready (about 10 minutes). The time in the oven just finished the chicken and produced a lovely jus that was used to flavour the rice on the plates. Really nice and you can use the chicken in different ways if you want, noodles, some nice greens or even as a wrap. Happy Tuesday everyone! I’m currently just sitting at my desk after having a busy morning and afternoon processing samples. In between everything I’ve done today, I did have a homemade lunch of stir fried broccoli, mushrooms, and sweet potato with marinated chicken & rice. I’ve been recently shopping at @freshthyme and have recently discovered their pre-made sauces. Definitely enjoyed trying the Korean bbq and the butter masala these past few days, and would purchase them again!
