Coconut Lemon Tart โ €

 This is a work of art and uses fairly healthy vegan ingredients. .
no-bake coconut lemon tart (for an 18cm panโ€”7inch)
CRUST:
-1 1/2 cup rolled oats
-1/2 cup desiccated coconut
-2 tbsp cocoa powder
-3 tbsp maple syrup
-1/4 cup nut butter
FILLING:
-1 cup full-fat coconut milk
-1/2 cup almond milk
-1/3 cup maple syrup
-1 tsp vanilla extract
-juice and zest of 1 lemon; adjust to taste
-1 tbsp cornstarch
-2 tsp agar-agar
-optional coloring: turmeric powder
In a food processor, blend the crust ingredients into a sticky, sand-like mixture. Transfer to a greased tart pan and press into the edges, then set aside to chill.
In a pot on medium-low heat, combine the milks and bring to a simmer while stirring well. Mix in remaining filling ingredients, then remove from heat and whisk until well-combined. Let cool for 7-8 minutes and pour into the prepared tart crust. Place the tart in the fridge to set for 2+ hours before serving.

Been a minute since my last post. Group projects and studying for finals has really been bogging me down ๐Ÿ“‘๐Ÿ˜ต๐Ÿ“š But as usual, I use cooking as my "Me Time" to relax and alleviate stress. Iโ€™m often influenced by what some of my clients eat. And Iโ€™ve had a long list of sandwich people so far this week. ๐Ÿฅช Only seems fitting that I made myself a yummy sandwich to feel part of the sandwich party. ๐ŸŽŠ

Chickpea Salad Sandwich
2 cans chickpeas, rinsed and drained
1/3 cup original flavored hummus
1 tbsp mustard (I really love horseradish mustard in this)
2 tbsp pickled relish 
1/4 red onion, minced
1/4 tsp garlic powder
1/2 tsp smoked paprika
Juice of half a lemon
Lemon zest๐Ÿ‹

In a Tupperware container, add chickpeas and mash chickpeas using a fork or potato masher until about 1/2 of your mixture is mashed (should still have some chickpea chunks there). Add remaining ingredients and stir to combine. Add salt and pepper to taste (I used about 1/8 tsp each). To assemble sandwich here, take two pieces whole grain bread and layer one slice with greens, 1/3 to 1/2 cup chickpea salad, roasted bell pepper, and sliced or mashed avocado. Top with second bread slice and enjoy. ๐Ÿ˜›

If you get bored of sandwiches, this filling works great spread on crackers with veggies on the side, a protein option for salads, or even spread on a rice cake for a snack topped with hot sauce.

Caramel slice to die for! This slice is so delicious and what is great is that it stores perfectly in the freezer but does not need to thaw. The caramel layer stays nice and luscious. Base:
3/4 cup macadamias
3/4 cup hazelnuts
I/2 cup Brazil nuts
2 cups almond meal
1 tbspn @ceresorganics pumpkin seed butter
1/4 tspn salt
2 tbspn golden syrup
3 tbspn melted coconut oil
1 tbspn date syrup
Process the nuts together until they reach a rough crumb texture. Place them in a bowl and mix with all the other ingredients. Press the mixture into the base of a lined square cake pan. Place in the freezer to chill.

Caramel:
1 cup roughly chopped apricots
1 1/2 cups pitted dates
3/4 cup @naturescharm evaporated coconut milk
1/4 cup filtered water
Big pinch of salt
1 tbspn raw vanilla sugar
1 tbspn golden syrup
1 tbspn date syrup
3 tbspn melted coconut oil
Place all the ingredients in a blender and blend until smooth. Spread evenly over the chilled base, scatter halved hazelnuts on top. Place in the fridge while you make the topping.

Topping:
1 1/2 cups @loving_earth raw cacao powder
1/2 cup melted coconut oil
1/4 cup melted vegan butter
1/4 tspn salt
2 tbspns maple syrup
Whisk all the ingredients until it is smooth and glossy then carefully spread it onto the caramel base ensuring you donโ€™t press into the caramel too much. Place in the freezer for at least 5 hours to set then score and cut into bars.

Maple Bacon Grilled Cheese

Take your grilled cheese game to the next level by adding maple bacon! Sweet, sticky, smokey and extra cheesy, this truly is the ultimate grilled cheese!

INGREDIENTS
4 large slices of Bread (here I use Sourdough)
8 rashers of Streaky Bacon
3/4 cup / 75g Cheddar, grated
4 slices of Smoked Cheese (here I use Applewood)
4 'spreads' of Butter
Maple Glaze
2 tbsp Maple Syrup
1 tbsp Brown Sugar
1 tsp Balsamic Vinegar
1/2 tsp Dijon Mustard
pinch of Cayenne Pepper
Salt, to taste

DIRECTIONS
1. Preheat oven to 350f/175c. In small bowl combine your glaze ingredients.
2. Brush both sides of your bacon using 3/4 of your mixture and lay on a baking tray. Bake for around 10-15mins or until the bacon begins to caramelize. Take out, flip and reglaze. Pop back in the oven for another 10 mins or until sticky and fully caramelized.
3. Place two slices of bread in a pan with the heat OFF. Spread with butter then flip over so both are butter side down. Add your smokey cheese, then maple bacon, then cheddar and finish with another slice of bread. Squish down with your hands and spread with butter.
4. Turn on heat to a medium and fry each side until golden. If you want to drizzle glaze over at the end then make a little extra and ensure it doesn't make contact with your bacon brush. -

There isnโ€™t just one way to go vegan. Some people do it overnight and completely cut all animal products out instantly. Some people might find that too overwhelming and it may seem impossible to them, so they prefer to go vegetarian or even pescatarian first and then continue from there. Then there are others who cut out products bit by bit eg. changing cows milk to almond/soy/oat/other nut milk, then moving on to changing to vegan cheeses and the vegan chocolate continuing on to being vegan. Whatever steps you need to take to become vegan is up to you but let me just tell you that once you do it, youโ€™ll feel so much better in every way and youโ€™ll probably look back and think.... why did I think it would be so difficult? If you need any support or have any questions about veganism or transitioning, please feel free to ask ๐Ÿ’“ and as I always say, itโ€™s very important to educate yourself. You need to know WHY youโ€™re doing it for it to continue in the long term.

Sautรฉed Lentils, Dandelion Greens & Radicchio! I'm a big fan of bitter greens, so this was right to my alley. Loved the flavor toasting nooch gave the roux and roasting the walnuts gave the overall dish. Will definitely try this again with spinach too! Recipe by @postpunkkitchen

This is a simple but handy guide on what to aim for each day and build your diet on these foundations. I suggest using these as a minimum each day and building 80% if your diet around wholefoods & supplements like D & B12. The remaining 20% or less can come from more processed foods if you wish like protein powder, meat alternatives or ice cream etcโ

Legumes are great sources of plant proteins, fiber & a host of different nutrients, you can incorporate them throughout the day, soy milk for breakfast, hummus & falafel for lunch, tofu for dinner.โ

Nuts & seeds for their essential fats, 1-3 servings a day and I include flaxseeds daily, plus often some nut butter.โ 
โ 
Whole grains like wholewheat products, brown rice, oats, etc. Oats in the morning plus brown rice for lunch & maybe avocado toast as a snack.โ

Fruit & veggies are some of the most nutrient-dense foods available, I aimed for a minimum of 10 servings a day, but start with 8 and build from there. โ

A supplement for B12 is essential, vitamin D is a smart choice for many & you could also include iodine if you're not getting it elsewhere.โ
